debbie is right on, as usual. Tofu is great. All the different types are fairly lowcarb. Especially the Japanese tofu, also known as Silken tofu. Surprisingly, the "light", lowfat-style silken tofu is lower in carbs than the regular. Of course, the silken tofu is best for sauces, or otherwise pureed or ground.

My only concern about relying on any one single protein source, such as soy ... is the high potential for developing sensitivity/ allergy to the food, This can happen with dairy, wheat and beef foods too. The best recommendation is to diversify, and select protein from a variety of sources. (ok, I'll step down from the soapbox now).

One thing ...if you are concentrating your protein intake on soy, it would be a good idea to take extra supplements of iron, vit. B12, and folate.

Take care, and do keep us posted of your progress.. :)
