Here is one recipe that I use:

Creamcheese Jell-O

1 pkg SF Jell-o
2 8oz pkgs of cream cheese
1C Boiling water

Dissolve the jello in water. Blend into cream cheese w/mixer. Pour into dessert dishes and chill.

(Sometimes I only use 1 pkg of cream cheese and it still turns out good!)

There was a question about a jello-cream cheese recipe. This is one I came up with. For lack of better a discription, I call it fruit mousse.

1pk sugar free jello ( any flavor - I like the "red" flavors)
4 oz cream cheese - softened
2 tsp Splenda
1/4 cup heavy cream

*Mix jello as directed to soft set.
*Whip the heavy cream.
*Beat Splenda into the softend cream cheese - you can soften in the microwave if you want to speed things up.
*Beat the whipped cream into the cream cheese.
*Pour a little of the jello into the cream cheese mixture and beat thoroughly, scraping sides. Now pour this mixture into the remaining jello and beat till thoroughly mixed, scraping sides to mix everything in.
*Pour into 5 individual serving cups (about 1/2 cup each) Refrigerate till set.

About 1 carb each :)

Hi Amytx,

I need your help. I've looked though the recipes on this site and can't find Easy Jello Cheesecake. Are you referring to ckx4's recipe for fruit mousse? I also can't find any search for the recipes.

Can you help me by putting the recipe in a post? It sounds so good.

Thanks in advance,
Magic

Greetings Kim,

Here's my version of a 'jello cream cheese thingie', it is simply called:

Cream Cheese Dessert

Combine and stir to dissolve completely - set aside:

1 pkg 3 oz package sugar free gelatin - any flavor
1 cup boilng water

Whisk together and blend well in a separate bowl:

1 pkg 8 oz cream cheese, slightly softened
1 - 3 tablespoons Splenda [to taste]
1 teaspoon vanilla
1/2 cup heavy cream
1 dash salt

Put a few ice cubes in a measuring cup, add enough water to make 1/2 cup total. Add water to gelatin mixture and stir completely to dissolve.

Combine cream cheese mixture and gelatin mixture, blend well. Pour into six small serving dishes, cover and refrigerate. [the new 4 ounce Glad brand plastic storage containers with lids work very well - I unmold them to serve and add a small dollop of whipped cream]

***

I concocted this one so it would be very simple, yet could potentially be an elegant dessert - don't we all love simple!!

Hope you enjoy it, it is one of our favorites - "definitely a keeper", as my DH says :-).

Stay well,

Holly

I hated these, but I think the problem was I could only find cherry sf jello.

Kim,

This might be the one you were looking for. It is very easy, very good, and very low carb. I don't recall where I got it, so I can't give credit to the creator.

I usually pour it into empty yogurt containers(about 6), so it makes a great “take with/on the go” treat. Just make sure that you wait until it chills before you put lid on the yogurt cup.

I like it best made with lemon flavor jello.

3 Layered -SF Jell-O

2 small boxes SF Jell-O, any flavor (0 carb)
3 oz. cream cheese, softened (3 carb)
4 tbsp. heavy cream (1 carb)

Directions:

Pour 2 c. hot water over both boxes of SF Jell-O. Stir to dissolve.

Add cream cheese. Beat with a mixer until the cheese is completely mixed in. It will be "frothy." Stir in 2 cups cold water.

Whip 4 tbsp. of heavy cream until stiff.

Lightly whisk the whipped cream into the Jell-O mixture.

Cover and refrigerate until firm. It will separate into 3 layers. Clear Jell-O on the bottom. A flavored cream cheese layer in the middle. A flavored whipped cream layer on top.

Servings: 4
Carbs 1 per serving
