Hello Guys: I have been missing mashed potatoes as well as potato salad. I know this may sounds crazy but while I was cooking some Devil Eggs, I liked the mixture from one of my fingers and the taste of the broiled eggs yolks, mayonise, onions, olives, peppers, and paprika, all mixed - up together reminded me soo much of mashed potatoes, the next day I broilded a dozen of eggs fixed the mix for Devil Eggs and eat it with steaks, Friends....... it was the most delicious and closest to mashed potatoes. :hyper:

I was reading in a gourmet magazine about a chef who began serving Lo Carb mashed potoes. In truth it isd cauliflower steamed and then mixed with butter/garlic/onion whatever. I have tried the Atkins recipe for Cauliflower pottoe salad and it really good.

steamed celery pureed with butter and whipping cream is also a great mashed-potato like dish!

I've heard of people doing this with well cooked broccoli as well. Just steam a little longer than normal, mash up, and and add whatever you want... I've yet to try it for myself though

A friend of mine uses cauliflower . She adds cream, sourcream, garlic, butter and salt and pepper and blends. He husband liked them better than his real mashed potatos.
