There have been various comments about foods spiking insulin e.g. caffeine, other trigger foods. I've been wondering about insulin spikes. Is that bad because it triggers hunger, or does it interrupt ketosis. If insulin doesn't have any carbs, or hardly any, to convert to glucose, why would it interrupt ketosis if that's the effect it has. Occasionally I have foods when I have to eat out where I suspect there's small amts of sugar involved or there's no decaf coffee available. I don't notice a change in the ketostix. So, is a problem of restarting carb cravings b/c of unused insulin?

I'll take a stab at this, and hopefully some will set me straight :)

Insulin spike, implies higher blood sugar. This also implies you are eating sugar, or high glycemic food enough to cause this surge in your blood sugar. Insulin, will work in storing dietary fat in your fat cels, and using protein and carbs for energy.

Granted, this depends on the amount of carb and sugar. I've occasionally stumbled on the sweet&sour surprises on some dish name on the menu that I couldn't figure out, but my ketones didn't change.

This maybe one of the cases where our bodies vary, and you might tray and see what works for you. BTW, Protein Power explains this quite well, even I understood it :)
