I just realized that I haven't read anywhere about the inclusion of vegetables on a CKD. Why is this? Do they keep some folks out of ketosis? I'm eating a large salad every day (can you say salad dressing delivery vehicle?) and often have steamed, buttered veggies (again, a fat carrier) for dinner. Anyone see a problem here?

I eat large salads and small bits of a few veggies (green beans, broccoli, summer squash). I don't think they're a prob at all. The fiber and vitamins are good for you. I just count the carbs and keep eating. :)

In the CKD 101 post, I am certain that I included a list of veggies that I frequently consume on this WOE.

Plus, I also frequently eat salads. It's fun to have all of the protein (chicken or turkey or seafood) smothered in oil/vinegar/spices.

And the crispy texture is a rare departure since most LC foods are soft.

Right you are, Dan. I guess I was thinking of most people's lists of their menus. Very few veggies mentioned. I don't think I'd like to have to give up my veggies along with everything else!!
