Greetings all. Hope all you are having a fine weekend!

Well, four more lbs. this week! YEE HI !

Thought I'd post another West Texas delicacy that is legal and oh so good!

If you liked Jalapeno Poppers before the Atkins WOE but had to give'em up because of the breading, consider this.

Stuffed, Wrapped & Roasted Jalapenos!

Start with garden fresh Jalapeno Peppers

Cut the top (cap) of the pepper off and clean out the seeds and core of the pepper (leave some in if you want it hot, otherwise, they are not in the least bit hot)

Stuff with a mixture of: Cream Cheese, Cheddar Cheese, Goat Cheese, Fried Minced Bacon

Wrap each pepper with Prosciutto Ham

Grill until outside of peppers are starting to wrinkle and the stuffings are bubbling. (usually about 30 minutes)

Mmmmm mmm!

Here's the picture......

I LOVE THIS WOE !

Thanks for the idea.

That looks great Paul! Is that a genuine Texan jalapeno roaster? We don't get those up here!

Hi Karen. Guess I should 've posted that over here to start with. Used to posting over there I guess. :o

The Roaster is one of my own creations made by welding washers together and sticking legs and a handle on it. Works great!

Cheers!

Hi Paul,

I'm curious...do you think you could roll the peppers in ground pork rinds & then fry? This week I tried some chicken and some salmon patties with a pork rind crust & I was very inpressed with the results. Maybe it would work for the bombers....just thinkin' out loud.

Tank, I don't know why that wouldn't work. If you try it, be sure and post the results.

Adios,
Paul

I must admit, my mouth started to water like the Rio Grande when I saw that picture! I think more recipes need photos like this!... (time to invest in a digital camera!)

How incredibly brilliant! You should sell them. It looks like they would work well in an oven too.

Hey Paul, I am from Texas and I can't wait to go home and try this. I will change it a littel bit by stuffing some ground beff.

Thanks

Greetings fellow LC'ers! Sorry I haven't repied to some of the posts but I've been oh so busy at work.

First off, TANK, how did those poppers breaded with pork rinds work? I'm really anxious to hear about your results!

Karen, I take your comments as a compliment especially since I KNOW what an accomplished chef you are. BTW, even though I have not said anything before, you have been a great inspiration to me! Thank you for the kind words on my jalapeno roaster. I HAVE thoght about selling them but only momentarily.. Having too much fun with it to start worrying about doing it for pecuniary gain.. LOL! And yes, it works great in the oven.

And to all, I REALLY hope that you will post YOUR results! I'd love to hear about them!

Cheers to All!

PaulB?

Could you post a picture of the Jalapeno Roaster without the jalapenos, I am a grill fanatic and would like to try and make one of these for myself! Any specs on the roaster would be helpful, too.

Thanks

My question is how in the world would you roast the jalapenos WITHOUT that wonderful roaster?? All the cheese would melt out!! Well, Paul.... you at least gotta make a few more and sell them to us!! Looks delish! Mmmmmmmmmmmmmm.

Wow... What a response.

If you folks are serious about the roasters, I'll take a serious look at it. I really never intended for it to be a commercial endeavor but I am seriously flattered and sure don't mind helping my friends on the LC Forum out.

Since I am hand building them, it's kind of labor intensive. There is about $10 of materials and it takes me about 1.5 hours per roaster, 2 by the time I get them cooked in. Does $25 sound OK?

If so, how about a show of hands. I guess this is where the rubber meets the road.

Lemme know....

Paul,

They are delicious. I didn't have a roaster but a mini muffin tin worked just fine for me.

Thanks

Great Collegekid! Thay are quite a treat. We also play around with ingredients. Sometimes I'll add fresh chopped cylantro and sometimes I'll add some chipotle (choke chile).

I haven't found a combo that I do not like yet!

I also tried this with habenero peppers this weekend. Once cored, they too are much milder. Still, habenero peppers, even cored, are not for the faint of heart. They DEFINITELY have a bite.

I apologize to the forum... I am not interested in selling roasters. I made mine for fun only. They are so easy that anybody with any crafts-skill can make them. It's way easy (and fun).

3/4" (ID) washers

3/8" or 5/16" cold weld steel (for the legs and handle)

Flux core wire, wire welder and viola!

The REAL secret is the recipe and you have mine. Now, make your own!

Summer won't be here for much longer so get to work! LOL!

I swear, the PICTURES of food are nearly as inspiring to me as the pictures of success stories! Well okay -- success stories rank #1 in the hall of divine inspiration -- but these great photos of food create excitement about it all.

Just as I was ENDING my "3 week trial" LC plan 9 months ago - starting as soon as I get my check, food and supplements I'm back on as a WOL now -- I got a crockpot. I got a book with so many great recipes I can hardly stand it. Still, many of the most common ingredients (onions, tomatoes, etc.) in dinner foods are not lowcarb in any quantity. (Btw, I didn't know you could make not only main dishes and soups/stews, but side dishes, specialty drinks, breads, and even desserts in a slow cooker! I think I thought SC's just had 1001 variations on stew. :-))

It would be cool to see a thread dedicated to slow cooker recipes that were LC. Given the time LC eating takes in cooking, I'd think SC's would be a lifesaver. Especially given how easy it is for me to dump 8 chicken breasts and some stuff in one, ignore it for 6 hours, then dump it in a covered bowl for the fridge and have chicken to eat, shred, slice, dice, etc. for days. (For those like me who have really high protein needs, that's way helpful.)

Put me in for one of your Jalepeno roasters. Love those peppers and would love to have you make me one of the devices..
It and the picture of the Jalepenos were wonderful
I have a brother in Longview Texas. Are you near there? I am from Boston.

PJ,

Sorry I've been so slow in responding.... This is the time of year that crockpot recipes would be great! Sorry I'm not much of a crockpotter but I do have some great brisket, loin, and venison recipes on the smoker...

Next time I do a brisket, I'll document and photograph it. In the meantime, if you have some good crockpot recipes, let 'em fly!!

pattierpm,

Next time I do a batch of the roasters, I'll keep you in mind. Not sure when that will be though. In one of my posts above, I document how to do it. If you have a welder, that's all you need. (and believe me, wire welders are cheap and SO easy)

Thanks for the kind words!

Somebody beat you to it. I saw these advertised in Chile Pepper magazine. Here's their site:
