I founf this new bread recipe in the new Atkins cookbook. The slices are very thin, but taste great.

2 Tbsp unbleached flour
1 Tbsp whole wheat flour
1 Tbsp rye flour
1 Tbsp caraway seeds
1/2 tsp baking powder (make sure it is fresh)
1 packet sugar substitute
2 eggs, separated
1/8 tsp seasoned salt
2 Tbsp ricotta cheese
2 Tbsp butter, melted
1/8 tsp cream of tartar
Preheat oven to 350F
Mix flours and caraway, baking powder. Beat in egg yolks. Sprinkle with seasoned salt and sugar.
Mix cheese into melted butter, Add dry ingredients and mix well.
Beat egg whites with tartar until stiff. Fold into flour mixture.
Spoon into small (about 2x6) well oiled pan. Bake for 50 minutes.

Fat = 3gm
Fiber = trace
Calories = 42
Carbohydrates = 2
