First, let me apologize if I got this idea from all the research I've been doing over the past several weeks. Before posting this, I tried finding a recipe for breakfast cereal using cauliflower, searching all the websites I've visited, but couldn't. I don't claim this to be an original idea, but this version of the recipe is mine. My husband likes it as a change from eggs for breakfast.
Hot "Cereal"
Ingredients:
1 cup cooked cauliflower pieces (2 carbs)
sprinkle of salt
1 teasp apple pie spice (? carbs)
1-2 Tblsp cream, depending on the wetness of the cauliflower (.5 to 1.5 carbs)
1-2 Tbsp butter, melted
1 Tblsp Splenda (1.5 carbs)
1 teasp vanilla (.5 carbs)
Total effective carbs: 4.5 - 5.5
Puree all ingredients in a food processor or blender (make sure there aren't any large pieces of cauliflower), heat in the microwave, add cream and Splenda to taste.
