Hi all. I have a question. When I whip up some cream using either a food processor or hand blender I seem to always mix it so it is a bit grainy in texture and not light and fluffy. Any tips on how to whip whipping cream?
Thanks in advance.

Use a hand or stand mixer or a balloon whisk. Hand blenders and food processors don't give you the right amount of control for whipping cream - they overprocess - and you'll get better volume with beaters.
I always use a large stainless steel bowl and a balloon whisk for cream. To make it go faster, I put cold water and a gel ice pack in the sink and set the bowl in the water while whipping.

Hi, I was just wondering what kind of whip cream do you use? Is it the kind in the packages that you mix with cold milk? I would like to get some but have no idea what kind to get! THANKS! :D

I always use heavy cream, not the stuff labelled "whipping cream" and never have any problems. It does help to chill the bowl and beaters, though. I have tried the food processor, but the whipped cream doesn't turn out as fluffy as it should.

This is going to start to get confusing. ;)
Look for real whipping cream that is sold in cartons in the dairy case, just like milk. Read the percentage of butterfat. 33% is so-so and 36% is fantastic. It whips faster, has better volume and is richer than a lower % cream.

This product - Dream Whip and others - has very little to do with real whipping cream and is not something that fits in with an LC WOE.
