The bread for this recipe is an adaptation of the almond bread Plum posted in Atrsy's journal on April 23rd. You can find the original recipe here:

The ham and cheese sandwich uses half the almond bread recipe, and makes 2 hearty sandwiches.

1. Beat 1 egg with 2 tablespoons cream and 1 tablespoon of olive oil
2. mix in 50 gr almond flour, ( about 3/4 cup LOOSLEY packed)and 1/2 teaspoon each of salt, baking powder and italian spices (either already mixed or a mixture of oregano, garlic and parlsey totalling 1/2 teaspoon)
3. Pour half the batter into a mini loaf pan, or 2 large sized muffin cups.
4. Top with thin ham slices and enough shredded cheese to cover the meat
5. Pour on the rest of the batter
6. Sprinkle with a few sunflower seeds

Bake in the oven at 350 for 30 minutes

Remove from mini loaf pan, cut in half. Serves 2

If made in large muffin tins, the sandwich becomes a self contained unit that can be eated on the run hot or cooled off. Watch out for dribbly melted cheese if eaten hot.

Plum posted the carb count at 3 carbs for the half recipe used. The other nitritional counts will depend on the type of meat (ham, corned beef etc) and the type of cheese that you use.

Both recipes sound great, but just how much is 50 grams of almond flour to those of us who think the metric system is a silly fad? :help: :lol:

Thanks for the translation! I tried making the bread and it is very good; I had it with ham and cheese for lunch. Next time I'll try your ham and cheese sandwiches in the muffin tins.

There's one thing I have had a heck of a time trying to figure out: the carb count of almond flour. What do you use? I have been using 16 per cup, but that makes the bread recipe a lot more than 6 total, so maybe I'm wrong (I hope, I hope :clap:).

Karla, here are my counts for the recipe. Everyone counts a little differently..it may depend on the counter you are using. I weigh everything instead of using measuring cups. A cup of tightly packed almond flour would be more carbs than a cup of loosely packed, so if would make a difference.

This is for the almond flour, egg and olive oil only. The meat and cheese will depend on what brands you use.

Calories 493
Protein 17.4
Fat 45.4
Carbs before fiber 10.3
Fiber 5.9
ECC 4.4

That would be for the bread for the double sandwich, so for half of it it would be 2.2 carbs

As for how to count the almond flour...I measured 50 gr of whole almonds on my food scale, then ran them thru my mini chopper until they were finely ground up.

Thanks Angela! To tell the truth, we don't miss bread much, but it's nice to know that if we feel like it we can make a sandwich.
