I never seem to know what dressing is "legal" on the Atkins induction diet. I was using plain olive oil, then just stopped using any, doesn't vinegar have carbs? Is there some sort of salad dressing that can be made with mayo? I'm not too good with all those spices etc, it has to be pretty easy please.

Also, i bought plain boneless pork ribs, what kind of sauce can i put on those during induction?

oil and vinegar work fine on induction, so does Ranch style. The ranch dressing normally has around 1 or 2 carbs per 2 tablespoons. Just measure it so you dont go over board and drown your lettuce. :)

As for pork chops, you could probably find a BBQ sauce that is 1 or 2 carbs per couple of tablespoons, or just season them and bake them in butter.

Thanks for the suggestions- i certainly am not a cook, although getting better now that i HAVE to prepare my meats! I was eating everything very plain so as not to slow down induction, but i'm ready for a little flavor! :D

What's Sauce For The Goose II: Condiments

Ketchup/Catsup
Easier Low Carb Ketchup

3 cups canned tomatoes (pureed in your blender)
2 teaspoons onion powder
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 cup white vinegar
2 packets artificial sweetener

Put everything except the artificial sweetener into a saucepan and simmer slowly 1 1/2 hours, stirring often. Take off heat and stir in 2 packets artificial sweetener.

Cool and pour into a jar.

Keeps 4 months in the fridge.

Makes 24 ounces at .83 carbs per tablespoon.

*** If you wish to get all fancy, removing the seeds before pureeing makes it taste even better.


Low Carb Ketchup

12 ounces tomato paste (I use Contadina)
12 ounces water
1 teaspoon onion powder
1/2 cup white vinegar
5 Equal tablets
1 tablespoon salt

Dissolve Equal tablets in water (I use tablets instead of packets
because they have 1/5 the carbohydrates). Combine all ingredients. Tastes a lot like real Heinz to me.

54 grams of carbohydrates in the entire recipe. 1 gram per tablespoon
(about 1/4 regular Heinz).


Atkins Vinegar and Sugar-Free Ketchup

2 cups tomato paste
1/2 cup lemon juice
1/2 cup water
1/2 teaspoon salt
1 teaspoon oregano
1/8 teaspoon cumin
1/8 teaspoon nutmeg
1/8 teaspoon pepper
1/2 teaspoon dry mustard
dash garlic powder

Place all ingredients in a blender or food process and blend well.
Refrigerate.

Makes 40 tablespoons/carbs per tablespoon: 0.4


Heinz-Like Ketchup
From: Chuck D.

12 ounces tomato paste
12 ounces water
6 ounces vinegar
10 Equal tablets (or 5 packets)
1 teaspoon onion powder
1 tablespoon salt
optional: pinch of cloves, cumin, other spices you might like

Dissolve Equal tablets in water then add remaining ingredients. Blend until combined.

54 grams in entire recipe. 1 gram per tablespoon (about 1/4 Heinz)


Spicy Roasted Tomato Ketchup
Adapted By Karen in Seattle From: The Food Network

2 1/2 pounds ripe tomatoes
2 tablespoons extra-virgin olive oil
1 medium onion, finely diced
2 cloves garlic, minced
2 canned chipotle chilies en adobo with the sauce that clings to
them, chopped
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
pinch ground clove
1/4 cup cider vinegar
1 tablespoon Brown Sugar Twin
1 teaspoon kosher salt (to taste)
freshly ground black pepper

To make the ketchup: Place a rack about 4 inches from the broiler
element and preheat. Arrange the tomatoes on a foil-lined baking
sheet. Broil the tomatoes, turning occasionally, until blackened all
over. Set aside to cool slightly.

Core and roughly chop the tomatoes with their skins. Heat the 2
tablespoons olive oil in a medium saucepan over medium heat. Add the onions and cook, stirring occasionally, until golden brown, about 10 minutes. Add the garlic, chipotles, cinnamon, allspice, and clove and cook, stirring, until fragrant, about 2 minutes. Add the vinegar and Brown Sugar Twin and cook, stirring, until the liquid is slightly syrupy. Add the chopped tomatoes and salt and season with pepper, to taste. Reduce the heat to medium-low and cook, stirring occasionally, until thickened, about 15 minutes.

Pass the ketchup through a food mill, discard the seeds and skins. Return the ketchup to the saucepan and place over medium heat.
Simmer, stirring occasionally to prevent scorching, until very thick,
about 15 minutes. Store in the refrigerator at least 3 hours or
overnight for the flavors to come together.


Barbecue Sauces


Tangy BBQ Sauce

4 garlic cloves
1/2 large onion
2 cups ketchup
1/3 cup vinegar
1/2 cup Brown Sugar Twin
1/3 teaspoon salt
1/2 cup tomato paste
1/2 teaspoon pepper
1/2 teaspoon Tabasco sauce
1/2 cup Worcestershire sauce

Saute garlic cloves and onions in a pot until clear. Combine the rest of the ingredients and bring to a boil. Simmer 15-20 minutes until sauce thickens.

Sugar Free BBQ Sauce

14 ounces beef broth
1/2 cup oil
1/3 cup cider vinegar
1/2 cup Worcestershire sauce
1 teaspoon salt
1 teaspoon Tabasco
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon chili powder

Combine all ingredients. Use to baste meat every 30 minutes or so.

My Original Patented Hot & Spicy LC BBQ Sauce
From: Chuck D.

To one batch of the above, add:

10 more Equal tablets (mixed in a little water)
2 tablespoons Tabasco (This ain't for wimps.)
2 tablespoons Lea & Perrins Worcestershire sauce
1 large clove garlic, minced
1/4 teaspoon dry mustard
1/4 pound (1 stick) butter
optional: 1 tablespoon crushed red pepper (Adds flavor and makes
hotter.)

Warm over low heat until butter is melted and ingredients are
blended. This sauce is intended to be served at the table, southern style, not used to baste the meat.

I suppose you could baste the meat with it, but since
there's not much sugar in it, you won't get the burnt sugar flavor
that people like. Plus, you won't be able to count how many
carbohydrates you are consuming because you won't know how much ends up on the coals.

62 grams in the whole batch. 0.9 grams per tablespoon and well worth
it.


Barbecue Sauce

1/2 small onion, minced
1 clove garlic, minced
2 tablespoons butter
1 cup tomato sauce
1/4 cup bourbon
1 teaspoon maple extract
2 tablespoons Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon salt
1 teaspoon chili powder

Sauté onions and garlic in butter in a heavy saucepan. Add remaining ingredients. Bring to a boil and simmer 10 minutes. Use to baste meats for grilling. Simmer 10-15 minutes longer to reduce to a thicker sauce for serving with cooked meat; especially good for ribs or pork chops.

Makes a little less than 2 cups, about 28 one-tablespoon servings.


BBQ Sauce

3/4 cup sugar free catsup
3/4 cup water
2 tablespoons vinegar
1/4 teaspoon pepper
1 teaspoon chili powder
1/2 teaspoon seasoned salt
1 teaspoon paprika
1/2 tablespoon Worcestershire sauce

Combine all ingredients & heat. Refrigerate.
Use over chicken, or other meats.

Total carbohydrate grams: 21.3
Per T: 1.0 (1/4 cup = 4.0)

3/4 cup catsup =12.0. Try to find a sugar-free variety, if available
or make your own.


BBQ Sauce (Low Carb)

1 stick of butter
1/4 cup vinegar
1 cup tomato sauce
2 tablespoons Worcestershire
1 tablespoon minced garlic
1 tablespoon Dijon mustard
dash crushed red pepper
2 teaspoon fresh lemon juice
1 teaspoon hickory liquid smoke (Awesome ingredient, found near the
steak sauces
in the grocery store)
3 packets Splenda or equivalent artificial sweetener

In small saucepan, melt butter, add vinegar and then other
ingredients. Stir until well blended. Bring to a boil, lower heat and
let simmer for a few minutes

Sweet BBQ Sauce

3 tablespoons Worcestershire sauce
1 tablespoon vinegar
1 teaspoon Liquid Smoke
3 packets Sweet n' Low or other artificial sweetener

Combine all ingredients and cook over low heat for 10 min.

(Total = 15 carbs - less than 1 g per T)

Do you mean low-carb cocktail sauce?

All you have to do is horseradish and lemon juice to taste to low-carb ketchup.

My husband likes Thousand Island dressing, so what I do is mix together some Steel's brand sweet ketchup (sweetened with Splenda) and mayonnaise for a very simple version of it. It tastes pretty good, and only 2.5g carbs per 2 tbsp.
