A number of otherwise very healthy foods (night shade family)
contain Solanine which appears to contribute to arthritis and
possibly have other nasty effects. Is there any way to destroy
or otherwise detoxify solanine? The web sites I can find seem
to indicate that cooking has no effect on it.

I know from experience, solanine survives cooking. I get
delayed asthmatic reaction, but no arthritis, from potatoes,
eggplant, peppers (Capsicum genus) and tomatoes, in
descending order of severity, beginning in spring-summer
1996. Potatoes and eggplant were always cooked, peppers
mostly cooked, tomatoes all raw (red or otherwise ripe, some
were yellow; not green). I haven't found any way to eat these
fruits and vegetables safely, though I can eat an occasional
cherry tomato at breakfast without knowing the difference,
but prefer not to.
