I just finished a cheddar cheese w/ mayo sandwich in which in
place of lettuce, I used sprouts from raddish seeds. Those
sprouts are probably my favorite, as they taste like crunchy
peppery horseraddish, and compliment the rather bland cheese.

health-conscious")

While I don't do this continuously--sometimes in the
wintertime, I may sprout some seeds on the kitchen counter for
some meal-time variety. But in doing a little reading, found
there's some very interesting changes in the nutritional
values in only 4-5 days from dormant seed to sprout.--example,
Vit. C content increases maybe 10x.... actually, it's almost
hard to believe what changes occur.

But this started me thinking....could there be a useful
application in areas of famine, for instruction in sprouting
at least some of the grain they receive?

I don't know the nutritional value of lentils when sprouted,
but there's a dish I make using lentils with a short 3/4" tail
on it, brief 3-4 minute stir-fry w/lemon and soy sauce, that's
nice...but these lentils, once sprouted, don't require
cooking, merely heating.....and this also might be useful in a
famine area where firewood is a premium.

I don't think I have anything that addresses this. Any
thoughts on this? Could sprouts be helpful in helping
famine victims?

Yeah, those radish sprouts are really going to turn that
cheddar cheese w/ mayo sandwich into a health food. :-(
