Does anyone know if sun-dried tomatoes can be eaten on a low-carb, yeast-free diet?

It depends on the ingredients... It would obviously be better if you made it from scratch but if you buy it, just make sure it doesn't contain any sugar or preservatives or cheese or certain kinds of nuts. It's really important to eat fresh.

If you make it, you can use cheese but only goat or feta. The nuts you can use are sunflower or pumpkin (both raw). Use a virgin olive oil and mix in black olives, garlic, lemon juice and fresh parseley if you want. No salt or pepper. If you make a large quantity at a time, make sure you properly refrigerate so that moulds don't have a chance to grow in the leftovers.
