Chicken Japanese Style

1 Servings

From Monday to Friday cookbook

1/2 tablespoon olive oil
1/2 tablespoon sesame oil
1 skinless boneless chicken breast half
1/2 tablespoon minced garlic
2 tablespoons lemon juice
1/2 cup chicken stock
salt
freshly ground black pepper
1 tablespoon butter
2 tablespoons chopped scallions

Heat the oils in a skillet or wok. Add the chicken breast and saute the chicken for 3 to 4 minutes.

Add the remaining ingredients except the butter and scallions to the skillet and bring to a bubble and simmer uncovered until the sauce is reduced. Add the butter and scallions to finish the sauce and serve.

This sounds really good. I was especially thrilled to see the recipe done up to make one serving....kinda get sick of always having leftovers, especially since I try and keep things as varied as possible to avoid boredom.
