Asparagus Chicken

1 Servings

1 tablespoon minced ginger
1 tablespoon minced garlic
2 tablespoons fermented black beans
1 tablespoon olive oil
1/4 cup chopped onions
1 8 ounce skinless boneless chicken breast half, cut in bite-sized pieces
1 teaspoon tamari soy sauce
2 tablespoons chicken broth
1/2 pound asparagus, cut diagonally in 2-inch pieces

Put the garlic, ginger and beans in your mini food processor and process until finely minced.

Heat the oil over medium heat. Add the onion and cook until it is translucent. Add the chicken and cook until it is no longer pink. Add the soy sauce, chicken broth, and black bean mixture and stir well. Place the asparagus on top of the mixture, cover, and simmer for 5 minutes or so until the asparagus is cooked to your liking. Mix and serve.
