RED CURRY VEGGIE OMELET

Egg base: 2 eggs, 1 Tbsp. of cream, 1/2 teaspoon of red curry and salt and pepper whip it...whip it real good.

Filling: 4-5 sliced baby portabella's, 2 Tbsp on green pepper...sautee both of these (I sauteed in a little bacon grease) and set aside. Add 2 chopped grape tomatoes to filling mixture (do not cook tomatos).

Cook egg mixture as you normally would for an omelet then fill the inside with the filling mixture and lay a slice of your favorite cheese on top. Fold over and enjoy. The Red Curry really adds a zing to it.

Hi! I know you submitted this a long time ago.
I use Red Curry in a thai stir fry recipe I make. It is HOT stuff. I'm just wondering if it is too hot in this recipe. I'm thinking about trying it but I may put less red curry in it. I learned the hard way not to put more red curry in trying to get the color to look right. :)
