a Chinese friend of mine taught me one of her fast food dishes that she keeps in the fridge for her family to nosh between meals..

the only thing i substituted were the flour noodles for the shirataki noodles.

1) 3 pkgs of shirataki noodles, rinsed and blotted dry with a paper towel. (you may want to take scissors and cut into smaller lengths than what is in the pkg)
2) sesame oil (1/4 cup)
3) 1 clove of garlic smashed
4) low salt soy sauce (2T) or to taste
5) 3T of chopped scallions (tops of spring onions/green onions)

Put all ingredients in a bowl and cover. keep in fridge.
eat cold.

double recipe if you have to have more. ;) :thup:

This sounds really good. I haven't tried shirataki noodles yet...will have to go looking for them, and find out if they're gluten-free or not. Love the idea of 'cold noodle salad' in the fridge. :yum:

Shirataki noodles are gluten free, but the soy sauce is not!

true, true... this was one of my mainstays before i realized that most foods weren't good for me. :lol:

Watch your brands of soy sauce ... some are gluten free. Braggs is the least expensive of the gluten free soy sauces!

Shirataki noodles are gluten free, but the soy sauce is not!

I haven't yet tried this recipe - but thank you for the reminder that soy sauce isn't g/f. I have 'wheat free tamari' here if need be. Just for the record - anyone who is wanting to stay g/f but would like to try the tamari stuff - the tamari seems much saltier than regular soy sauce, so be warned about this. I don't use it very often - I've had this bottle here for like a year or more. If a recipe calls for a certain amount of soy sauce, you might want to cut it down a wee bit if you're planning on using 'wheat free tamari sauce'.

Meanwhile, when I feel like getting fancy, I will try this recipe out sometime. :)

The g/f tamari is available in low sodium too. I find the g/f tamari tastes a bit metallic.

The recipe looks good.

Braggs makes something called "liquid aminos" which is wheat and gluten free. High sodium like most soy sauce though. T

I just looked at this recipe again ... 1/4 cup of sesame oil? I usually use just a splash of it - is there a brand that would be recommended for this recipe that is NOT as expensive and highly flavored as the more common ones?

i would say to use your splash if 1/4 c seems too much for you.
whatever makes this dish appetizing for you!
noodles suck up the oil, hence the quantity.

How about mixing peanut oil and sesame oil, Glenda? I think they both taste really good.
