HOT CHEESE BITES....
In a regular size biscuit pan or glass pie pan, spray with pam and layer jalapenos on the bottom (1 layer only unless you want to cry...lol)
Add at least 2C shredded sharp cheddar
Beat and Add 3 eggs (pour evenly on top)
Bake 350 for approximately 20 mins...cool a bit...cut into bite size pieces and enjoy!

These were an absolute hit at my house. We've had it three times now and twice for breakfast! The second time I made it, I spread chopped proscuitto (a salty/fatty ham cut) over the cheese. I also added a total of 6 eggs and 1/4 c. heavy cream whipped together. After pouring over the dish, I then spread grated parmesean cheese over the top. It turned out wonderful, light and fluffy, and very filling for two.
Today, I made it for the third time, (back to 3 eggs, but kept the proscuitto and parmesan) and took it to work for a couple of fellow lc's. It was a HUGE hit!! :thup: :thup: :thup: :thup:

BTW, I use pickled jalapeno slices, I don't thing they are as hot as fresh ones. I am looking forward to trying other variations. :D

Hey missatc...I'm so glad that you like these!
I've since cooked them with different cheeses (Mexican blend was great)...and I used paper thin slices of green pepper and onion on the bottom instead of the "hot stuff"...actually you can use anything that you would top a pizza with. I'm going to try some of your variations!

P. S. I didn't like the pickled jalapenos as well as the regular canned ones.
