EVERYDAY GYROS :p
(adapted from Cuisine at Home June 2008)



2 big servings

1/2 lb ground lamb
1/4 cup onion chopped
1/4 cup chopped fresh parsley
1 garlic clove
1 low carb tortillas (this goes in the food processor as well)
Salt and cayenne to taste
Mince all in food processor. Divide meat into 4 portions, forming each into cylinder about 4"long and 1" wide. Insert skewer through the length of each, shaping the meat onto the skewer. Coat with nonstick spray. Grill kebabs, covered, turning occasionally until cooked through about 8-12 minutes. Warm extra low carb tortillas on the grill (this will be your pita bread)

Greek Salsa (add to gyro)
makes 2/3 cup
1/4 cup tomatoes, diced
1/4 cucumber seeded, diced (I keep seeds in them)
2 Tbsp red onion, diced
Juice of 1/2 lemon
serve at room temperature

Yogurt free Tzatziki Sauce(add to gyro)
serves 4-6
(half this recipe for 2 servings) :yum:

1/2 cup sour cream
1/4 cup feta cheese very small crumbles
1 tbsp lemon juice
1.5 tbsp baby dill fresh or 3 tbsp dry
1 dill pickle minced (I'd start with half the pickle and taste to see if you want more cause pickles vary in size)
1 tbsp olive oil
1 clove garlic minced
salt and pepper to taste
Mix and serve chilled
(some folks like a few cucumber slices chopped fine and added to the mix)
remember to taste as you make

Place Tzatziki sauce in warmed low carb tortilla
add gyro and top with Greek Salsa
