I'm going camping next weekend for a few days with the family. We are staying at a different place each night so traveling during the day. Dinner and breakfast will be at our campsite, which will definitely be SB friendly.
But I'm concerned about the times I'm going to be in the car, especially lunch time, where it would be so much easier to grab a sandwich and chips. Any suggestions?

Also, doing s'mores around the camp fire at night is going to be really hard for me to pass up. Does anyone have an idea of something I could eat instead?

Smores - almond cracker recipe (http://cavemanfood.blogspot.com/2009/04/grain-free-almond-crackers.html)with sugar free chocolate in between? Maybe add some splenda to the recipe to sweeten them up a little.

Camping food is always a toughie. I guess I'd use more bacon & cubed chicken, fried eggs and lots of veggies and water. A personal sized cooler would be beneficial I believe!

I do Atkins... so those may not be great ideas for you. I know nothing about South Beach

P.S. I've only been doing SB for about 3 days now so I'm doing Phase 1.
If you've got a cooler to take in the car with you, your lunch could easily be leftovers from your campfire the night before.

As for those s'mores....thats gonna be a tough one....if you had a fridge, you could easily bring frozen no sugar added fudgsicles. We can have 2 of them a day in phase I...II or III.
If you have read the book, this occassion could be counted as one in which we use the "3 bite rule". So...3 bites and thats it. :idea:
And when you come home, you really should start phase I over, if you do eat the 3 bites of the s'mores.

Okay, it's nothing like a s'more, but I love to stick a whole mushroom on the end of a stick and roast it slowly over a fire.

mixed nuts....this is a hard one unless you carry a cooler...veggie sticks, low fat cheese string, even a nut/seed bar made natural with honey instead of those yuk fake sweetners..in my opinion they leed to even more cravings... have fun whatever you choose!

Thanks for the input everyone. I tried a "South Beach High Protein chocolate cereal bar" the other day because I was out and about and got hungry. It was pretty good, though probably not allowed in Phase 1. At least I didn't grab for some high carb snack. ;)

So I'm thinking that might help me on my trip during those moments when the kids are snacking on granola bars
or when they are doing s'mores.

No, sorry they are not OK and you really should avoid them while in phase I. I tried them and never eat them any longer. Too many bad ingredients.:thdown:

You'd do much better with Larabars and they'd put you into phase II as they are made with nuts/seeds and fruits.

I find them everywhere. Health food stores, grocery stores, Whole Foods stores. :idea:

I was camping last weekend too, and here is what I used for smores. I made almond thins (recipe below), used 80% lind chocolate and one marshmallow (1 large has 6 carbs and 25 cal).
Breakfast was really easy (eggs white and spinach at the camp site). We usually travelling all day, so we eat lunch at the restaurant (I got large salad with grilled chicken) and I carry my own salad dressing in a cooler. Dinner was at the campsite. We made the veggie pockets (put any veggies you like in a foil, add 1-2 tbsp of olive oil and seasonings and freeze at home), cooks wonderful on the campfire grill and grilled chicken breast.
For snacks during a day I ate celery and fresh green beans with 1 oz of cheese.
I did have to eat a smores, but while it is not 100% legal because of marshmallow, but it is much better than a real thing
ALMOND THINS
3 ounces almond flour, 3/4 cup
2 teaspoons granular Splenda
1 egg white
3/8 teaspoon salt *

Mix all of the ingredients well in a small bowl. Everything should be moist and the dough should hold together somewhat. Put the dough on a well-greased sheet of heavy-duty aluminum foil, about 15x18". It's helpful to crumble the dough mixture and spread the crumbs in a roughly rectangular shape on the foil. Cover the dough with a piece of wax paper that's been sprayed with non-stick spray. Roll out the dough to about 1/8" thick or slightly thinner. Try to get the dough to an even thickness. You can also carefully peel up the wax paper and reshape the dough to get it as close to rectangular as possible, about 9x9" square. Replace the wax paper and continue rolling until nice and even. Peel off the wax paper and use a pizza or ravioli cutter to score the dough into approximately 1-inch squares. I cut 8 strips one direction and 6 strips the other way after running the cutter down all four sides to even out the rectangle.
Lift the foil and set it on the oven rack and bake them at 325º for 10-15 minutes, or until golden brown. Check after 10 minutes and if crackers at outer edge are getting pretty brown, remove those and continue baking the rest until golden. I used a thin metal spatula to very gently pry the crackers from the foil. Break them apart on the score lines and let cool. They will keep for weeks in an airtight container in your pantry.
Makes about 48 crackers
Can be frozen
Per batch: 515 Calories; 43g Fat; 22g Protein; 19g Carbohydrate; 10g Dietary Fiber; 9g Net Carbs
Per 8 crackers: 86 Calories; 7g Fat; 4g Protein; 3g Carbohydrate; 2g Dietary Fiber; 1g Net Carbs

I see that you are doing well with your breastfeeding and weight loss doing phase II, correct?
Renee is in phase I still and can't really use many of the ingredients yet, that you put into your smores.
Your smores are good for phase II, not phase I.
And one more thing, marshmallows are pure sugar and being that we don't count carbs or calories, we do not go out of the way to eat any foods that not only contain sugar but are only sugar.
I'm glad that you found a way to make it work for you. :agree:

I agree that marshmallow is not a good choice but I couldn’t find anything to substitute it, so I figured that one is better than to fall off the wagon completely. I was up 2 pounds after camping last weekend, but it was gone in 2 days.
We are done with breastfeeding for almost a month already. Woohoo! I am bouncing between phase one and 2 all of the time. After this camping trip, I am back to the phase 1 for a week. Even when I am in phase 2, I eat berries and very rarely oatmeal. I don’t do to good with grains, even if it is low carb bread, I stop loosing.

Sounds like you are right on target to me!! :agree:
I don't lose well when eating flour from grain but old fashioned oatmeal works well for me. I float between the phases now in maintenance. :cool:

Can I just share that I had a spoonful or two of refried beans last night with dinner and they tasted awesome. I use to feel guilty when eatting them while doing a stricter low carb diet but now that I've switched I feel like I'm getting to enjoy certain foods again that I had deprived myself from eatting. And I lost another pound this week.
So that's a total of 4 lbs lost in one week. Whooo Hoooo!!!:cheer:

Anyhow, I'm not sure that I'll be doing the s'mores thing at all. Right now I'm feeling strong enough, will power wise, that I just might not be tempted at all by what the kids are eatting. But if I cave in and eat one, I'm not going to beat myself up about it. :)

I'm back after 2 weeks of camping/traveling. I tried to do the best that I could but did give in and ended up gaining 3 lbs. :(
I guess it could have been worse.
And on a positive note I did do alot of hiking and walking. And now I'm pumped up to get right back on the SB plan. :wave:
