Going to a BBQ starting at 2 that will last through the night. We're asked to bring a side dish so I wanted to bring something safe that I could have in case's there's nothing there for me that has protein/veggies and is cold.

The only thought I can come up with is a huge tossed salad with grilled chicken? Any other suggestions of the top of anyone's head?

I guess I could grill a bunch of vegetables and bring that too...

Those are both good ideas. I also like to bring an "antipasto salad". I mix chopped romaine lettuce, tomatoes, roasted peppers, olives, marinated artichokes, fresh mozzarella, and a balsamic vinaigrette dressing.

Or a 3-bean salad is always good too. I make a Mexican 3-bean salad with cilantro. red peppers and green onions that is always a big hit. That was one of my "specialties" that people always requested even before I started SB, but it's pretty Beach-friendly so I still make it now.

How about a seven layer salad without the peas. Everything on the list is LC and can be bought already cooked, chopped and diced.

* 1 pound bacon
* 1 large head iceberg lettuce - rinsed, dried, and chopped
* 1 red onion, chopped
* 10 ounces shredded Cheddar cheese
* 1 cup chopped cauliflower
* 1 1/4 cups mayonnaise
* Sweetener to taste
* 2/3 cup grated Parmesan cheese

Oh thanks so much Joe and Donna! Donna I'm liking the sound of the antipasto salad! I may have to do that....Although that seven layer sounds good too....

Even though the 7 layer SOUNDS good, it's not very SB friendly. You'd have to make alot of modifications in order to make it so. Then after you made all those modifications, you wouldn't be eating too much of it anyways.

Gotcha....I did notice that. I'm going to do the antipasto salad I think. Not sure why I didn't think of that?

Donna if you read this: when you say chopped do you mean regular salad style or chopped up small? (I'm a dunce in the kitchen)....I use to get this great chopped salad at an Italian restaurant years ago and all the ingredients were chopped real small and fine - it was soooooo good.....I'm thinking you just mean regular cut up...LOL (sorry)...it just reminded me when you said chopped? I dunno why?

I actually think that Jayseem didn't realize that he was posting this in the SB forum.
First we can add peas when in phase II
As for the other ingredients, we use turkey bacon and reduced fat cheeses. All the rest of the ingredients are SBD phase I OK. Peas are phase II but sugar snap peas are phase I and I think would make a good layer too. I just love those little green things. :yum:

Of course you can use any good/lean protein in that salad as it doesn't have to be chicken. I know its a bit pricey but for a special occassion, shrimp are always nice in a salad too....just no picking the shrimp out all by their little shrimpy selves. :lol:

When I make a big salad, here are a few ingredients that I put in:
Lettuces ( obviously :p )I use a variety of them
roast red peppers from a jar
hearts of palm(canned)
marinated artichoke hearts
olives ( black kalamata for me :yum: )
sweet onion sliced very thin
english cucs
sugar snap peas
grape and or plum tomatoes
avocado

Actually you could do it either way. For this salad, I usually do cut it up a little smaller than I would for a regular salad, but I guess it's not quite small enough to be "chopped". More like bite-size. But it's not an exact science - it would work whichever way you like it!!

Delicious Broccoli Salad:

Broccoli florets (probably two crowns worth)
chopped red onion (as much or as little as you like)
one cup reduced fat cheddar cheese (sharp if possible)
4 slices of turkey bacon crumbled
1/2 cup light mayo (regular if you prefer)
splash of apple cider vinegar
dash of salt
dash of black pepper

This is a super delicious salad and I don't usually like raw broccoli. I guess if you add cheese, bacon and mayo to anything it would taste great :lol:

Oh I love this and have had it before......with raisins and walnuts too! So good! On Atkins I made this to bring out a lot! Sans the raisins --- and I'd put splenda in the dressing part. So good! Thanks!
