I really do not like dry foods and to me beans are so dry. What ideas can you offer to help me get in my daily requirement of beans and legumes that I might possibly be able to tolerate/enjoy?

I had the exact same problem!! :)
Here are a few of the ways I incorporate them into my plan:
*hummus as a veggie dip
*chilis with beans as an ingredient
*split pea soup :yum:
*red lentil soup :yum:
*canned garbanzo beans into a salad( rinse befor eating)

Hummus!!!! I love hummus!! Especially with red bell pepper strips for dipping - YUM.
I also make a lot of stews and chilis, etc - beans are a natural addition to these dishes.

You know after thinking about it and searching the web and roasting some garbanzo beans this afternoon, we really don't need to eat that much.
1/3 - 1/2 cup wasn't much.
Your ideas are great....I still would like to make my own hummus as right now I'm eating the Athenos one and far down the ingred. I saw HFCS......bummer

I found a very easy hummus recipe the other day. I will share if you like. I used to buy pre-made, but I'm trying to save money and it's cheaper to make my own.

Here's the one I made - it's very easy. I may experiment with seasonings though - I thought the cumin was a little weird in it. (Not bad, but just not what I normally expect hummus to taste like)

Yes, cumin has a strong flavor and added to hummus could overpower it. I'd just add a dash of it.
I buy the Sabra brand around here....many flavors to chose from and I like the spicy one. :yum:

Its important to note that this is a calorie dense food as it also contains fats....so watch your portion size as 2 tbs is a serving. :idea:

I like black beans with a little salsa on top.
Or No fat refried beans, they aren't as dry as their WHOLE counterparts ;) They even make, chile and lime and spicy jalepeno no fat refried beans, tasty!

I know virtually nothing about the South Beach Diet, but if you are allowed to eat soups containing beans -- then you can purchase cans of black beans or cans of chili beans -- and add either to a pot of water containing mixed vegetables.... then you flavor it using a bit of salsa, perhaps a tablespoon of spaghetti sauce, or a couple tablespoons of diced tomatoes -- and of course garlic & onions.
I first started cooking with canned black beans when someone posted what they said was a SB recipe -- it was delicious -- you cut up all colors of peppers, saute them with onion in a frying pan, and then add a can of black beans.
I don't know anything about the phases, or what phase that poster was at, but it was simply a delicious meal. Black beans are very tasty.
Something I am CRAVING while on Atkins. :)
Anyway, if you check out recipes for SOUP which used canned beans for an ingredient, you'll be busy for ages & ages - plenty of great recipes online.

Then slow cook navy beans with the sauteed vegetables. I don't think you'll be thinking about the beans being dry...
My wife likes to drop a handful or two of mixed beans and or nuts into her soups. We have soup as a side dish once or twice each day.

Didn't measure any ingredients, sorry, but they're all SB safe so the quantities don't have to be exact. Mashed all this together and served it with raw veggies for dipping - YUM!!!!

Nah, I did it by hand - beans are soft and easy to mash with a fork.

tonight's side soup dish:
Lima beans
white beans (not sure what kind)
green onions, chopped
garlic greens, chopped
fresh lemon, cut in small wedges
turkey necks, pressure cooked till tender (meat falling off bone)
seasoned with a dried chinese pepper seed (similar to pepper corn)
Main dish:
Pancake wrap with green onions & salt (chinese version of fajita wrap)
ground beef
diced celery, bell peppers, jalapeno peppers, turnips
black soy beans
steamed julienned potatoes, carrots & garlic
seasoned in assorted chinese spices & sesame oil
all ingredients placed in the wrap and eaten...
Nothing dry about my dinner. :)

Last year I finally learned how to cook refried black beans, and was simply astounded. I soaked the beans for two days, changing the water several times a day, and when I slowly added them to boiling water in a heavy cast iron pot, they were fully done in under an hour and a half.
The word, REFRIED, is not really accurate to what you do.
First, mince up a whole bunch of onions & garlic, depending on how much you like them, then take a frying pan,
Traditionally, you add lard to the frying pan.
I didn't use any type of fat or oil.
Over medium high heat, you simply scoop up a ladleful or two of the black beans you've cooked -- take the water, too.
Dump them in the frying pan - just the two ladlefuls.
Then let them heat to bubbling while you're stirring and mashing them up -- you'll see that the water bubbles, and starts to "sauce out," and you keep letting it simmer down, evaporating the water -- this is when I add all the garlic & onion and stir well.
The mixture is very hot & bubbling - watch out for burns.
You simply keep adding ladlefuls of beans/water from the pot of cooked beans, and letting them condense down in the large frying pan, while constantly stirring, and frequently mashing down the beans.
It was so simple!
And home made bean dip is absolutely scrumptious. And so very inexpensive! I was just shocked that it was so easy, just so simple to make.
The next thing I'm going to add back into my own version of Atkins'72 is one-eighth cup of canned refried black beans, every other day or so, to see how my system reacts. But that's a couple weeks away as yet.

Lentils (canned again but don't rinse). Heat and simmer-add cilantro, onion, garlic, cumin and a little cayenne for heat.
Beans definitely are not dry and you can add so many spices and herbs to them! So happy I can eat them on SB!

Which my stupid lil hick town doesnt have in any stores anymore , so when i go to the town 20 miles away , they have it there at the natural food store........and the superwalmart 30 miles away has it too.)
I have also seen some bean dips make with black beans , or one with white beans ( i think that was a somersize recipe) I will have to look it up.
Beans is like the main reason I went to south beach & not atkins anymore. It seems every time I tried atkins , the first think I craved was chili with lots of beans , or black bean soup.

I made a pot of chili the other day. 2 lbs of grd turkey, lots of veggies and 1x 14 oz can of beans...not lots of beans but some beans are in it. :idea:

Try white beans in your baked goods (sugar-free of course). I've done this - in cookies, for example - and liked it very much. I think you can replace up to a third of the fat in your recipe with (mashed) white beans. You should be able to find some recipes in an internet search.
I've also used white beans to make a vegan mayonnaise substitute.

Judy , I have seen Tahini online. But I do get to that town on regular basis , so I just stop in when Im passing threw. I gotta tell ya off subject tho........there are 3 stores in my town , I have to go to all three to get what I want , cant get it all in one shot........im seriously thinking of just going to the superwalmart 30 miles away everyweek anyway , just to save sanity.
Never tried my recipe without tahini , i like the recipe & dont wanna change it........thats me being anal.......lol

There is a recipe in the new book for patties made with mashed kidney beans.......not sure on that one. I may try em one day tho......I will let you know.

Hows this for beans? I made it for dinner , it was kinda a quick throw together thing. Kinda like a chicken tortilla soup
Here is what i put in , and the only thing I did measure was the chicken broth.
Squirted the pot with a bit of canola , and sauteed some chopped onion, chopped celery & green pepper.
Then added , diced white turnip , more diced green pepper , zuccini cut julienne style ( makes it feel like noodles) , 3 cups of chicken broth , some diced tomatoes ( 1 small one) , splash of salsa , a can of navy beans , can of black beans , a can of fat free chopped & cooked chicken, lil garlic.
Cumin & cayenne pepper to taste
Let it simmer til the turnips were soft.
It was good , tossed a lil bit of shredded cheddar on top.
It made alot , it will be lunch or snack tomorrow!

I also like to whip up a salad with marinated artichokes, mushrooms, garbanzos, onions, tomato, bell pepper, feta, red wine vinegar, and olive oil. Served with or without lettuce.

Yes, I bet that they are very addictive!!
On SB, we keep our beans to a minimum of 2 servings a day, 1/3-1/2 cup is a serving size. So, we don't overeat them!! :)

This probably sounds odd but my kids and I really like tuna chickpea salad. I don't have an exact recipe but it's basically just tuna fish (albacore), couple chopped roma tomatoes, cucumber, celery, red onion, rinsed and drained garbanzo beans, fresh lemon (juice and a couple scrapes of zest), kalamata olives, extra virgin olive oil, fresh parsley, salt and pepper
kidney bean salad is also something we eat a lot of, it's good alone or on top of a green salad, I don't add extra salad dressing when I top it with this.
1 can dark red kidney beans, rinsed and drained
1/2 walnuts, chopped fine
1 clove garlic, chopped fine
2 TBL red onion, very fine chop
1/4 to 1/2 cup fresh parsley, chopped (depends on taste I like to go heavy on it)
1 TBL red wine vinegar (I add a tad bit more than the recipe called for)
2 TBL extra virgin olive oil
1 tsp splenda granular
