Phase I, I don't see parsnips listed anywhere. I love them, but I do see lots of root vegetables are on the foods to avoid list, so my guess is that I can't have them. What do you guys think??? (They are on sale this week at the grocery & that is mostly how I plan my meals, it's whatever I can have that's on sale)

I've learned that parsnips have a very high Glycemic Index and that is why you don't see them on the lists. Now that I'm in maintenance, I use them when I make chicken soup as I do enjoy the flavor they add.

While you are in weight loss mode, I suggest you stick with the allowable foods. Mashed turnips are allowed and are similar. :idea:

Half a cup cooked is 13.26 with 3.12 fiber. That's twice as much as carrots, which are not on induction.

Parsnips aren't low carb, maybe that's a good thing. They're loaded with some pretty toxic stuff.


Parsnip root contains three photoactive, mutagenic, and photocarcinogenic psoralens in a total concentration of about 40 parts per million. These chemicals are not destroyed by normal cooking procedures (boiling or microwave); thus humans are exposed to appreciable levels of psoralens through the consumption of parsnip and possibly other psoralen-containing foodstuffs. The toxicologic consequences to man of such exposure may be speculated on the basis of medicinal and laboratory studies, but epidemiologic data are not available

So half a cup cooked is 13 grams carb, 2.9 fiber and 55.38 calories if that is what the OP wanted to know.
Actually, she wanted to know why she does see them on any of the SB food lists...and its due to their very high Glycemic Index, as I answered her in my post. :)
