Does anyone have a homemade mayonnaise recipe? I did a search and didn't find one. What kind of oil works best?

Sometime when you're at your local public library, check out Vegetarian Cooking For Everyone by Deborah Madison. She has pages of great mayonnaise ideas in there. She comments on different oils and has several suggestions for flavored mayonnaises. It's an excellent book. The author started at Alice Water's Chez Panisse in Berkeley, then was executive chef at the Greens restaurant, and finally has ended up out here in Santa Fe. She had a restaurant here for a while but then decided to focus on her books -- all of which are outstanding.
