I finally got around to taking pictures of my favorite Thanksgiving dessert. I posted a photo and the recipe on my Examiner site.

I tried it last Sunday for my birthday, and it was really good. My mom didn't even know the crust was not graham crackers til I told her. I ground almonds in a coffee grinder. I increased the splenda by 2 packets. I used an oblong pan; next time I think I'll use the 9x9 pan so the slices will be thicker.

When I run out of Trader Joe's almond meal, I will have to start grinding my own. (The nearest TJ to me is in New Mexico. While a scenic drive, it's a little long for a trip for groceries :D )

I tried making it last week using Da Vinci Simple Syrup and I wasn't happy. Too runny. I will stick with the powder even though it means a few extra carbs.

I buy my almond flour online at Honeyville Grain.

It is blanched almond flour (the skins are removed) and it is $28.99 for a 5 lb. bag. IMO, this is a good price for the blanched almond meal. The blanched kind gives great texture to LC baked goods. I store it in the freezer

This recipe looks awesome. Will have to try for the holidays. Thanks!

I just made this, haven't tried it but the filling is fabulous! Very tasty, I have the crust chilling now, my DH is ready to lick the bowl clean.......he tried the filling too.....says it is fab!

Thanks for the recipe, I used Sweetzfree as my sugar. I also cut down on the amound of "crust" making it just barely covering my 8x8 square dish.

Do you happen to have the carb count?

I will make this for Thanksgiving day! :yum: Perfect alternative to pumpkin pie IMO!

you could certainly do that, if I were you I would opt for an immersion blender. Works so well for so many things, mine is priceless!

You could do the filling, put into little custard cups, and top with whipped cream, that would be fabulous as well.

This is in Dana Capender's LC cookbook. I made it without the crust and it was still yummy! Anyone able to figure out how many carbs w/o the crust??

Her's is different, much different, her's is one you must bake, contains eggs and uses sour cream.

yikes. its in the fridge cooling... i counted up everything i used and its 45 carbs for the whole thing.... even if i sliver it into 10 pieces.. thats still over 4 carbs per piece..
i hope adam likes it because i could eat the WHOLE thing... .

Oh boy mine is as well, someone mentioned freezing..........I think I will try it. What type of sweetner did you use btw??? I used sweetzfree which has no carbs at all. I also cut the almond meal in half. HUM? I think I better freeze/give some out..... :lol: :lol: could be dangerous!

i used sweet-n-low... i KNOW.. but its the only one i like and it only took 4 packs. i just noticed that the new pumpkin i bought has 7 more carbs per can than the one i bought at wal mart.... next time ill use the other and it will but it down to 38 and if i can find a liquid sweetner will make it 34.. i didnt use a crust. but i like the idea of putting it into little cups... better to visualize for portion control...

This recipe is based on an old no-bake recipe my dad used to make. I am not familiar with Dana Carpenter's recipes since I don't own any of her books. Since mine is specifically designed to be no bake and contains no eggs, I doubt it is the same thing.

This recipe is based on an old no-bake recipe my dad used to make. I am not familiar with Dana Carpenter's recipes since I don't own any of her books. Since mine is specifically designed to be no bake and contains no eggs, I doubt it is the same thing.

It was nothing like her recipe. Her's was the baked type.

It was good, although I think I prefer the baked type. I do think that if you were pushed for a quick dessert, that this would be perfect without a crust in a little pretty bowl topped with just a dollop of whipped cream, sprinkle of cinnamon. I know I almost always have creamcheese, cream and pumpkin in my pantry.

More than a few bowls of the filling have been ....uhh...SAMPLED...around here...sprinkled with some crushed almonds and a bit of splenda :p


And thanks for the details Annie. If I get a recipe from someone else, I am sure to give credit where credit is due. Not sure why the other poster would try to accuse me of stealing a recipe when they are nothing alike...LOL

OMGawd!!! I just made these (as bars). They are FANTASTIC!!!! :clap: The filling alone is just.... incredible!! With the crust.... well, let me just say...my husband is VERY non-lc. He says, "I'm allergic to low-carb anything" :lol: He just ate two pieces and asked for more. LMAO I thought he was gonna cry when I told him it was LC, for me and that I froze the rest! :p

I did vary it a little, simply for my own taste. I am not a huge fan of the taste of cream cheese so I used just 1 pkg. and upped the whipping cream to a 1/2 c. It came out beautifully fluffy, delicious and amazing!!

I made this today and wow! The chiffon part is fabulous! I used sweetzfree drops, about 14-15. I also doubled the cinnamon and ginger (I adore spices).

I'm already envisioning making a lemon chiffon pie using this method.

Ok, devoured the pie today and all I can say is this recipe is going to become a tradition. The crust was super good too, although I think a little bit of salt might have enhanced it a bit. I'll have to try that next time.

Ok, lemon version wasn't all that good. Maybe if I'd used fresh lemons and lemon zest it'd be better. But I just wasn't thrilled. Also, this pie REALLY needs a crust. The insides don't get super firm, I tried to make the lemon version without a crust. So instead I froze it.

Raspberry or other berry though... hmmm, that might work.

I've made this twice. The first time, I doubled the batch and put into dessert cups (didn't realize it would make so much!!). I fixed it last Thursday with the crust and it was absolutely delicious! My step-son even ate it and he didn't even realize it was low carb (you know 16 year olds will eat anything that doesn't move any way :)!!!

I may try it the way Kurst made it with just one package of cream cheese and extra heavy cream. I doubled the amount of spices, except the cinnamon---was even yummier :yum:

I would definitely recommend this pie to anyone!

I made this for thanksgiving...maybe i did something wrong?
It tasted really really bitter and i coudln't even get a full slice of it down. It looked beautiful...but egh...i wouldn't make it again.
Did anyone else think it had a bitter aftertaste?
I wonder if i did something wrong or accidentaly omitted something?

Mine was just fantastic!!
What kind of sweetener did you use? I used Splenda and it turned out great! I do have some Stevia but hesitated to use it in this recipe.

I used a mix of equal and sweet-n-low....i wish i could use splenda, but it gives me awful migraines.
I think next time i'll sub coolwhip for heavy cream and see if it helps, since i can't use splenda.

Why don't you purchase some Erythritol and/or Xylitol? They're both very natural. If you use a lot of xylitol it'll cause stinky farts but the erythritol won't. You can order the E. at netrition.com and other places on the Internet. Xylitol you can get at some health foods stores nowadays.

You got that from the sweeteners you used. Nothing else in the pie could impart a bitter aftertaste.

It had to be the sweet and low. That stuff is down right nasty. NO WAY is the cream to blame. Cutting that out while adding in that horrible fake food.... ::::shudder::::

I've been dieing to try them but wasn't sure how they are.

Ok, I made this again for Xmas but 2 changes.

I added a layer of chocolate next to the crust and then drizzled on top in a nice pattern (I should take a picture).

And TJ's stopped stocking organic pumpkin but I got a can of organic butternut squash puree instead. You really can't even taste the difference.
