~Cheesecake~

Ingredients for filling:
5 packets Splenda
2 8-ounce packages Philadelphia Cream Cheese (softened)
2 eggs
2 teaspoon vanilla

Ingredients for Topping:
1/2 pint (1 cup) sour cream
2 packets Splenda
1 teaspoon vanilla extract

Directions for Pie Filling:

In a large bowl, mix cream cheese, Splenda, eggs and vanilla thoroughly. Pour into greased cheesecake pan. Bake in a preheated 375°F. oven for 20-30 minutes. Remove from oven and set aside.

Preparing the Topping:

In a medium bowl, mix sour cream, Splenda and vanilla together until you have a smooth mixture. Pour on top of the pie filling; smooth with spatula.
Bake at 500°F. for 10-15 minutes. Watch pie carefully during this time, the crust may get too brown in which case reduce the oven temperature.

The texture reminds me more of a rich custard- I think it's delicious. [considering I have not had anything in the dessert department in a long time!] I'm sorry but I don't know how to figure out how many carbs/fat/calories per serving.

I ran this through my Recipe Calc v4.0 and here is what the results came out to be:

I based this on 10 servings:

Calories: 235
Calories from Fat: 195
Total Fat: 21.6g
Sat Fat: 13.3 g
Cholesterol: 103 mg
Sodium: 159 mg
Total Carb: 4.6 g
Dietary Fiber: 0.0
Protein: 5.5 g

If anyone gets anything drastically different, please let me know!

My mother-in-law makes the high-carb version of this as a pie, of course with graham-cracker crust, but oh well . . . :rolleyes:

But its the filling that makes her pie to DIE for . . . I gotta try this to see how it compares . . . I would love it to come close so I can enjoy that taste again . . . .THANKS A MILLION!!!

I have a thread w/ custard variations too that may interest you. I love them for breakfast.
