It has been a while since I did the LC thing hard core, but I am now getting back into it. I used to use a bake mix two or three years ago that came in a dark red box, and had a recipe for almond or pecan cookies on the backusing a combo of the mix and ground nuts. That mix was great, and those cookies in particular too! Now I can't remember the brand, and can't find anything I recognize online. Maybe the packaging has changed, or they have gone out of business (I sure hope not). Anyone know what I'm talking about and can point me in the right direction? I'm so hankering for some of those cookies!

If you are talking about the Atkins Bake Mix, it has been discontinued. There are other products you can use, or you can make your own at home. I know there is at least one recipe on the "Contents" sticky at the top of the Bread & Baked Goods forum. Here is another, from Barbo over at the LCF forum (sorry, I've lost the link to the page! :( ), if you prefer not to use soy:

Bake Mix

Source of Recipe Unknown

List of Ingredients

1 cup almond flour
1 cup vital wheat gluten
1 cup unflavored whey protein powder
4 packets Splenda
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Blend well, and use as you would any other bake mix
