How do you guys cook them for SB? I was thinking I'd roll them in an egg wash and coat them with parmesan cheese and fry 'em up. Anyone ever tried that?

That's exactly how I do them, Amy. They are really yummy! I've got a few myself that I need to get cooked up before they turn on me. The way things usually work though, I will have fresh red tomatoes for dinner one night this week lol
Speaking of cooking, I have my dinner all ready to go for tomorrow. I'm trying to make use of that crock pot I bought last week. I cut up peppers (red and green) and an onion and put in the crock along with about 12 garlic cloves and a layer of fresh mushrooms. Then I browned a sirloin roast and laid it on top. Tomorrow morning before heading off to work I will pour in a cup of reduced sodium beef broth and turn it on (I set the crock in the fridge for the night). The house will be smelling really good by the time I get home. Whip up a side for J and the kids and a salad and dinner is served!

Mojitos on the Beach
We made this refreshing summer cocktail Phase 1-friendly by omitting the alcohol and using a sugar substitute in lieu of sugar or syrup. It's just as delicious as the original, but you can enjoy this cooling mocktail anytime of the day!
Mojitos on the Beach (Phase 1)
Serves 1
Ingredients
Fresh mint
1 lime
1 package sugar substitute
Crushed ice
6 ounces lime-flavored sparkling water
Instructions
Crush a sprig of mint in the bottom of a cocktail glass. Squeeze the juice of one fresh lime into the glass. Add 1 package of sugar substitute, crushed ice, and 6 ounces of lime-flavored sparkling water. Garnish with mint and serve.

This is such good idea for a party becuase you can still feel like you are having a cocktail but with no alcohol!! :idea: :agree:

Hi all! I really need some support this week!
Am doing a recommit to Phase I because the past few months have been iffy (I had two surgeries in four months and had a very hard time sticking exactly to plan). From January to March, on the beach, I lost 20 pounds and was feeling really good about it. Have gained 10 of it back since March and GOTTA get going in the downward direction again!!! Was sort of thinking of trying another plan, but I don't know WHY I would do that bc South Beach was really working for me. I guess it just seems daunting to start over again, you know? :eek: Am feeling nervous...but I desperately want to get back in gear...so any thoughts would be welcomed.

I made a big batch of chicken salad today using a large roaster, onion, celery, dill pickle relish, and Smart Balance mayo. Chicken salad is always good in the dog days of summer. I had some tonight for dinner in a Joseph's Oat Bran and Flax Pita with radish sprouts. I made a big batch of stir fried mixed veggies with broccoli, zucchini, yellow squash, red bell peppers, mushrooms, onions and snow peas. I had that with the chicken salad along with mashed sweet potato with a little half and half. I am STUFFED. :D
I have enough food to last 3 or 4 days.

Something like 2 surgeries would totally disrupt my life. I can understand how easy it would be not to pay attention to your food plan.
This WOE does makes you feel good! There is such a big selection of food to eat. I can't tell you how sick I was of protein when I was eating VLC. It got to the point where I couldn't eat chicken any longer and none of the cream cheese goodies made me feel any better.
You have to do what is right for you and your body. But if you liked it before, I don't see why you wouldn't have the same success again!

I haven't tried the Smart Balance mayo yet but I LOVE the Smart Balance margarine. This time I tried it with the Omega stuff and Olive Oil. It was great. I did try the Kraft (I think) reduced fat mayo with the olive oil and it is great.

I had a very good food day today and this makes me happy! :D
My brunch was a lox/eggs and onion scramble....with avocado and tomato on the side. Kept me full until 9pm and I ate it at 2:30pm.
I got my bike out and filled the tires with air and went for a ride....for over 1 hour!! That felt fabulous!! :thup:
The shrimp fajita was excellent and now I need to keep away from the leftovers!! :o

It's so funny that you mentioned that we were home on Saturday night. I told my hubby earlier this evening (before reading your post) I said," You know we are really old?!" He said, "Why?" I said, "Because if anyone asks me what I did last Saturday night I'll have to say, 'I vacuumed my floors!' "
I've also done laundry, tanned, cooked supper, and went and got the mail, but they aren't anymore fun than vacuuming...LOL!!

Sass, I think you've done really well overall. Two surgeries on the same knee and all the pain (emotional and mental on TOP of the physical) that goes along with that is enough for anyone to fall completely off plan, but you haven't. Sure, your eating hasn't been perfect the whole time, but you must be doing something right to have only gained back 10 lbs. How many of us would have said, "Screw it!" and gone totally off plan, regaining all the weight and then some? That this hasn't been the case for you, IMO, shows that you are ready to do this. I believe you will find success on the Beach, Sass :bhug: :bhug:

I'll have to try the green tomatoes. If I don't get run out of my house by squash!!!!! Those things are prolific.
I had another day without wheat on Saturday, and I didn't want to snack. I guess I'll just have to do as Judy says, and eat more starchy veggies and no wheat.
Since the scale change (and I bought one that at least weighs consistently), my weight loss seems to be slow, but steady. I am having difficulty with about 4 pounds, but it's psychological. I thought that I had already lost those pounds (according to the old scale). :(
Monday a.m. is my official weigh in, so we'll see how it goes.

You have lost those 4 lbs!! You need to raise your initial weight when you get a new scale that weighs you higher!!
The exact same thing happened to me in my first year. I got my new Tanita and it weighed me 4 lbs higher than I had been on my old scale. I was so bummed!! But I had to get that I was not 270 when I started according to my new scale, and that I was really 274. :idea:
Lucky you with all the squash. I love it as it can go into most any dish and does not overpower it with its own flavor. I made a ground turkey Italian type dish with onions, mushrooms in a nice pasta sauce. I cut up 3 zucchinis into it to beef it up with more veggies. Loved it!! :yum: I do the same with chili. :idea: I call it my, Very Veggie Chili. :lol:

Plateau Problems?
While it may be frustrating, it is not uncommon to reach a plateau in Phase 2 of the South Beach Diet, especially as you get closer to your target weight. Weight loss in this Phase of the South Beach Diet is much slower than in Phase 1, but that's fine in the long run since slow and steady weight loss is best for long-term success. That said, if you'd like to jump-start your weight loss, here are some strategies to try:
1. Try eating different foods. Sometimes people get into a food rut, eating the same things day in and day out, which may lead to overeating as a result of feeling unsatisfied with your routine. Add more variety and different veggies to your meal plan to combat boredom. This may be just what you need to get over a weight-loss stall.
2. Get adequate exercise. Enjoy a fitness program based on interval training, where you alternate between short bursts of intensive effort and easier recovery periods. When you work at a higher intensity for part of the time, you end up burning far more calories and fat in less time than you would if you were working out at a steady pace. This type of exercise will help you develop more lean muscle mass, which helps boost metabolism, in turn allowing you to shed unwanted pounds.
3. Keep track of what you eat. In general, the South Beach Diet does not require you to count calories or portion sizes. But you may be eating too much of certain foods to keep losing weight at the same pace. SouthBeachDiet.com's registered dietitians recommend taking a close look at the amount of nuts and low-fat cheese you're consuming and cutting back on these items if you're eating too much.

If your cholesterol and blood-sugar levels have normalized, your desire to lose weight may be a matter of cosmetics. In this case, rather than focusing on the number on your scale, focus on how much better you feel and how much healthier you are.

Overall I feel pretty good about how I look and what I have accomplished this past yr. I love the way my clothes look and feel on me. I have more energy and a clearer mind. I have more confidence in myself in many other areas of my life as well (I jumped right on stage earlier this month in front of a 1,000+ people and didn't bat an eye!). There are some days where my confidence lags and I don't feel so happy with myself, but I think those days will always be there no matter the number on the scale. This is most likely true for all women.
Being in "weight loss mode" for so long... I think it is going to be a challenge switching gears. That my diet is a healthy one and I am not starving myself or purging or engaging in other self destructive ways will allow me to ease my way into a different frame of mind. It creates a buffer, if you will. As I sit here typing this I'm trying to think through how I feel about going into maintenance...the nervousness or fear that I believed I would have...I'm not feeling it. I've learned how to eat so that if I should see a gain I know exactly what to do to fix it before it gets out of hand. Knowing that I know what to do is actually pretty calming.

Judy, the bad news is that I used the weight at the dr.'s office as the starting point for my loss calculations. The fact that my old scale was 4 lbs. lowers resulted in my overstating my losses :(
The good news is that this morning, it looks like I've managed to lose those 4 pounds. I was down two more pounds for my official weigh in.
I have been laying off the wheat products and studying about wheat allergies and side effects. I'm going to leave wheat alone, and possible try adding some other grain in a week or so to see what happens.
I have also learned that casein (from milk products) can have the same effect as wheat on many people. Luckily casein is not as concentrated in cheese. This still means that my yogurt fix could be contributing. I'll let you know how that experiment goes.
I've pretty much worked the program the way it should be worked, with one exception. I haven't cut out coffee to the extent recommended. However, last week I did compromise and start drinking half decaf/half high octane, and I haven't had any serious problems with that transition.
I'll check in later. Thanks for the support.

I had a really good weekend full of delicious food. I went to Moes's Southwestern Grill and had the best LC salad. Yummy and satisfying! I made Eggplant Parm this week to bring for my lunches. I leave for a ten day vacation Thursday. I'll make sure I'm armed with healthy snacks.

I drink coffee on SB and it hasn't effected me. And I too,am not aware of coffee being a no no. You can have caffeine but not to go overboard.
Made Pavlova over the weekend and really enjoyed it with my greek yogurt mix with peaches. This was my first try at making meringue and it turned out great. The only thing I would do different next time is make smaller ones. I use a regular size cup,draw a circle from it and turned over the parchment
so I wouldn't get any lead in my system and filled the circle w meringue.
My weight stayed the same and I'm happy with that.When I don't lose weight I look at other positive things I did. There is always something besides the scale that makes program successful. Congrats to everyone who lost weight

I may weigh in today and it may be tomorrow. I have to go pick my paycheck up and then get it cashed, so it just depends on how much time I have left afterwards before I have to be at work at 1:00. I will let you all know tonight if it was a go today or a no go and will be tomorrow. Problem is, lunchtime is really busy at the center where I weigh in and it doesn't open til noon. That's an hour but I need driving time to work and check in as well when I get there.

The weekends are always a tough time to not see gain for me.....so seeing the scale down a bit for a Monday is truly a lift for me as I tend to see loss during the week as I'm very busy and active all day every day.

Hello All,
I am currently doing Atkins 72' (have done SB in the past) but just wanted to come in and say (I hope I don't get flammed for this ) but I noticed a huge difference in the SB forum from others and that is the positivity and "happiness" from those doing it.
Seriously I go on other boards and other plans and it seems like so many people are "angry", "defensive" and "unhappy" with their plan and it shows in their posts their response to others regarding their plan, but I always noticed a consistency with those following SB on this board and other boards.
I also noticed that SB followers seem to "stick" with the plan better I don't see the usual frustration and tweaking although I'm sure it exists.
All in all what I am saying is I feel that when you are apart of a message board especially dealing with weight issues when the people you are interacting with are positive, successful and willing to help it can make a HUGE difference in another person's journey to weightloss.
So although I am doing Atkins 72' (not sure for how long) I am still reading my SB book, lurking in the SB section and when I do make the switch I feel good knowing that you postive folks will be here for support.
Congrats to you all on your successful weightloss and I wish you much success on your continuing journey. :)

Hello All,
I am currently doing Atkins 72' (have done SB in the past) but just wanted to come in and say (I hope I don't get flammed for this ) but I noticed a huge difference in the SB forum from others and that is the positivity and "happiness" from those doing it.
Seriously I go on other boards and other plans and it seems like so many people are "angry", "defensive" and "unhappy" with their plan and it shows in their posts their response to others regarding their plan, but I always noticed a consistency with those following SB on this board and other boards.
I also noticed that SB followers seem to "stick" with the plan better I don't see the usual frustration and tweaking although I'm sure it exists.
All in all what I am saying is I feel that when you are apart of a message board especially dealing with weight issues when the people you are interacting with are positive, successful and willing to help it can make a HUGE difference in another person's journey to weightloss.
So although I am doing Atkins 72' (not sure for how long) I am still reading my SB book, lurking in the SB section and when I do make the switch I feel good knowing that you postive folks will be here for support.
Congrats to you all on your successful weightloss and I wish you much success on your continuing journey. :)
I've noticed this too, but here more than other boards. It's nice to know I wasn't just imagining things ;) When you do make the switch, K, we'll be here to cheer you on :)

You did great choosing the full fat :thup: ....see the food lists for dressing parameters....it tells us to use full fat when faced with a choice like this as the low fat versions use HFCS and or sugar.
While we do use low fat dairy, we do also use good fats like olive oil and canola oil. I always chose the ones with the least amount of sugar. :idea:

Here you go:
Salad Dressing - 2 TBS. Use those that contain 3 grams of sugar or less per 2 TBS. Best choices contain canola or olive oil. Low carb salad dressings may also be used if they meet these guidelines.

Hi i have a question. I am not feeling so hot. I am super tired, light headed and my hands are shaky. I looked it up and i see that happens if you don't eat enough, but i have eaten a lot today. Is their something i need to do or is my body just going through carb withdrawrals?

Yes, You are experiencing some withdrawal....and flax pancakes, while legal, are not your best choice so early on as you do need to eat some protein and a veggie for breakfast. are you following the meal plan charts? If not, they are on the first page of my journal along with updated food lists.
Are you planning on getting any beans/legumes into your plan? They are recommended! :idea: ie: plain beans, split pea sooup, lentil soup, bean dips like hummus.

It does not have to be eggs for brekkie...it can be any protein!! I had homemade chicken salad for breakfast today with slices of cucumber and tomato. :yum:
Also when you use up your seed alottment for the day with breakfast, then you are not supposed to have any other nuts or seeds that day...I like to save my portion for a snack. :idea:

I had hogfish fillet (local sport fish), steamed broccoli and carrots and my beloved sweet potato for dinner and I am stuffed! I remember sweet potatoes as a child and I hated them because they were covered in sweet goo. A plain sweet potato with a little Smart Balance tastes like heaven, better than candy. Even broccoli tastes sweet when you never eat sugar. :)

The ham is your protein...the beans, while they do have some protein, are counted towards your 2 daily bean servings, 1/3-1/2 cup is a serving size.

Reading through the book, I am really disapointed with the contents. This forum has more info on it. Gee a paragraph for phase 1 then menus of food for 14 days, I guess I expected alittle more info on say menu planing? or converting recipes, or did I miss that. I will re-read it. Any hoo today is going well, Just got up a few hour ago and will eat before work. Not hungry (good sign) having a snack at work also. Have a great night everyone. Sorry about the rant over the book. :D But I am loving the diet once I get it all figured out more.

Thanks for the welcome. Here are my eats for yesterday, I posted them in my journal...
BF: Protein Shake, V8, Coffee with milk
Snack: Cheese String
Lunch: Salad with turkey, tomatoes, olives, spinach, parmesan cheese, vinegrette with 1 T. Ranch dressing
Snack: 2 slices bacon and boiled egg
Dinner: Left over pork chops and broccoli
Planning seems to help so I am trying to do that a day or so ahead at least... I think that way I will stay out of trouble... Boiled six eggs yesterday for upcoming snacks and couldn't get the suckers peeled...what a mess... Definitely must have done something wrong because I've never had a problem with them peeling before... Oh well, went online for advice, and today they peeled much better...

Today is day 5 for me and its getting ruff. Just the though of eating anything else carb free honestly makes me nauseous but i am trying to just think happy thoughts. I actually stood and watched a man eat a chocolate sprinkle doughnut on the street today like a man would watch a pretty woman walking down the street. haha i am a sad sad lady. I refuse to quit though it has to get better!

jennasouru- What you are now facing is what I call "managing our internal dialog." I know its hard but I have been down this road many, many times. I have had to force my mind to switch its focus and force it to think about all the foods that I can have on plan.
I've had to force my mind to not think about the smell of pizza as I walk past a pizza shop...same with all the fresh bagel stores around here. It feels lie I walk through a mine field sometimes.
But it does get easier over time...if you pratice not allowing your random thoughts to rule your choices.
Next time you see anyone eating a food that you are not eating, force yourself to turn away...don't stand there staring and salivating!! ;)

Jennasouru, I was never crazy about eating a lot of protein when I was on very low carb and sometimes it made me nauseated. That's why I switched to South Beach. You can take full advantage of the dairy options and eat yogurt with any flavoring such as vanilla or lemon or get some SF Da Vinci syrups. I had nonfat yogurt with butterscotch SF syrup for my snack last night and it was like a desert with protein! :yum:

IMO....get close to your goal before you start baking( like within the last 10 lbs). During your weight loss, eating foods in the whole state, will be better for weight loss...flour can be a killer....any flour!!

Made a big batch of chicken salad with onions, celery, dill pickle relish and Kraft reduced fat olive oil mayo. I have a couple of sweet potatoes in the oven. I'm planning on Red Bean Soup with Cajun Spices and Sunday will be Apricot Glazed Chicken adapted from page 271 of "South Beach." I couldn't find Cornish Hens. :( I have a mound of veggies: squash, sugar snap peas, cabbage, spinach to sautee.

Thanks for the recommendation. I will try cooking it for less time, as well as try the Morning Star Soy Sausage.... At the moment though, trying to revamp breakfast to eliminate the turkey bacon....:lol:
As far as this weekend, I have burgers on plan and am making some soup...as well as a chicken stir fry....
Lowcarbugh...that chicken salad sounds good maybe I will make a little of that as well...

Lunch today was, yep, chicken (with a salad) and dinner tonight...I'm cooking breakfast for everyone. More eggs. Chicken is something that I have a hard time cooking well, which is why I don't cook it that often... It is usally too dry when I cook it. Hopefully, with my new grill coming that will eliminate the dryness... I do well with stirfrys though...

Chicken Cacciatore
hmmmm, hmmmm good!! I made a pot of this last night and it came out so good that I have to share it.
Ingredients-
1-2 lbs chicken breast tenders cut into approx 1" squares
or 1 lb ground turkey and 1 lb ground chicken
2- 1 large or 2 medium onions, sliced thin
4- 1 tbs crushed red pepper
5- evoo- 1-2 tbs
6- 6-7 grated garlic cloves
7- 1 small can tomato paste
8- 1x 26 oz jar of good sauce from the store
9- 8-10 ozs of sliced mushrooms
10 2-3 zucchinis slices into 1/2 moon shapes
1 tbs coriander
1 tbs hot paprika
1 tbs grill mates garlic chicken
2 tbs oregano
2-3 bay leaves
salt to taste
step 1- brown chicken and set aside to drain
step 2- heat in large sauce pan- evoo, crushed red pepper and grated garlic. when you can smell the garlic, start to add in all the chopped veggies, onions, mushrooms and and zucchinis then allow it all to cook down into its own juices- approx 20-30 minutes.
step 3- when the veggies are cooked down, add in all the chicken/turkey and can of tomato paste and crushed tomatoes or sauce. cook this on a simmer for at least 30-40 minutes stirring occasionally.

hi girls, thanks for the support. I feel much stronger as the day went on. I got some steamed shrimp and broccoli and egg drop soup from the chinese place and it was yummy and made me feel like i was eating normal food. I know i need to show myself that this is my new every day normal food. one day at a time!
hey skeeweeka try cooking the turkey bacon less time. if you over cook it the turkey bacon does get a bit dry. you know what else is good, morningstar soy sausage.
I was wondering if any of you guys low carb bake? I am a huge baker (I have dreams of one day owning my own cupcake shop when I'm older and done with the music biz) I found a blog that has all kinds of low carb recipes using things like coconut flour, soy flour and xanthan gum When i reach phase two can i attempt that or should i stay away from anything baked?
