Classico has a new variety of their alfredo sauce, "mushroom alfredo", 3g per serving. On a whim I grabbed it and tried it in one of my grandparents' old chicken recipes that calls for canned CoM soup, and it came out really nicely and the consistency is right on.

The stuff is expensive, the carb count isn't all that low if you eat a lot of it, and I'm sure other people have better 'from scratch' solutions, but if you have some favorite recipe that calls for the ubiquitous canned cream of mushroom soup, this might be worth a shot.

I just use the cream of chicken mushroom soup. Fewer carbs than the mushroom soup and only a little bit more expensive.
