I got some Organic Philadelphia cream cheese in the supermarket recently, think it must be very new as I haven't seen it again since. It has fewer carbs than the regular Philly. The texture is more grainy and less smooth, and I felt it tasted a bit stronger - not unpleasantly, just not so creamy.

The label says it is not recommended for heating but it seemed to be OK when I included it half-and-half with regular Philly in my usual lc cauliflower cheese. Next time I may dare to try 100 per cent Organic Philly in the sauce!

Intersting info, Jackie.

I use Waitrose 'Creamy Soft Cheese' which has only 1.6 carbs per 100 grams so have not tried philly.

For my cheese sauce I use only a little cream cheese (1 oz) along with cheddar (4 oz) and cream (2 fl oz).

Does your recipe use mainly cream cheese? Any chance of posting that for us?

This is what I do to make my cauliflower cheese: I cook the cauliflower in not too much water. Then I put some cream cheese and a little mustard in a jug and soften it in the microwave, then I add cauliflower water and mix it in, little by little until I get a pouring sauce. Sometimes I'll add some Cheddar cheese before I finally heat the sauce up properly.

I like doing it this way because I feel I'm making use of the flavour from the cauli water, and any vitamins that are still left in it after I've used it to cook the cauli.

So I guess my version of cheese sauce is more or less the reverse of yours - around 1 oz of Cheddar to 4 oz of cream cheese, plus the cauli water, of course.

Both versions have their advantages! Yours sounds lovely and cheesey.

Yes - the person I got the recipe from called it 'Rich Cheese Sauce'!
