Today my kids and I pureed some honeydew (just chunks of honeydew in the blender; nothing else added) and froze in popsicle molds. It came out delicious!
We had more melon and not enough molds, so we froze a few in gladware 4oz containers, and then a whole bunch in an empty styrofoam egg carton. Those make great ice cube trays!
I'm still in weight loss mode so I only had one "ice cube" worth of frozen melon, but it was absolutely delicious! My kids enjoyed them as well and said they're just as tasty and smooth textured as the commercial ones we buy occasionally.

I can't wait to try something like this. The no-dairy thing means none of the frankenfood ice-cream type treats...and it is kinda nice to have a summery 'treat' every now and then isn't it?
Gonna have to get some popsicle mold thingies. :)

This kind of thing is great for a frozen treat. We do the same with all sorts of fruit. I make these with banana and passion fruit when we have bananas that are getting a bit old :yum: .
Another easy one is buy a can of fruit salad in juice and blend that up.

Yum! I bet some coconut milk mixed in would be good, too. I'm thinking raspberry coconut for a lower carb treat. Thanks for the idea!

I did the instant ice cream thing with frozen blueberries and heavy cream once or twice. I bet coconut milk would work great!

that sounds great! I love blueberry or strawberry smoothies and the fruit with heavy cream sounds so good.
is heavy whipping cream the same thing? (I don't use cream too often, don't know if there's a difference...)

Just had to come back in here to tell you that after I read your post to my husband, he decided to try a 'Paleo Ice Pop' deal himself.
Here's what he came up with (very good!):
Coconut, Lime & Mango 'Pops'
------------------------------
1 can light coconut milk
1 mango - fruit only, cut into chunks
Juice of one fresh lime - or two tablespoons lime juice, to taste
Whirl up in blender and pour into popsicle molds. There was enough to make 6-8 'popsicles' but we only had 4 molds. The rest was poured into a bowl and shoved in the fridge. Interestingly, the next day - the leftover coconut/mango/lime stuff had turned into 'pudding'. The pops were good, and so was the pudding :yum:
This morning, when I was opening up a can of organic light coconut milk, I noticed that the label said, "Coconut milk will solidify when cold".
No wonder we got pudding. And no wonder it freezes so well.
