This is a soft microwave custard, with a taste and texture similar to rice pudding (but less lumpy)

Ingredients:

1/2 cup coconut flour
dash of salt
1/3 cup granular erythritol
1/3 cup DaVinci French vanilla syrup
1 to 2 ts. vanilla
2 large or jumbo eggs
1 cup water
1 cup heavy cream
1 Tb Thick'n'Thin NotStarch
2 ts butter, added at the end


How To Prepare:

Whisk the eggs in a glass microwave-safe bowl. Whisk in the wet ingredients, then the dry. Nuke for 2 minutes, then whisk again. Nuke another minute, then whisk. Repeat til the custard mixture has thickened to a soft, thick liquid. This took about 4 minutes in 1 minute chunks for me.


When it is a thick liquid pudding, whisk in the butter and pour the mixture into 6 small dishes or leave it in the glass bowl. Chill in fridge. It will thicken even more as it cools, and makes a soft custard with a slightly grainy texture. It tastes very like rice pudding, and would be great with a little cinnamon and/or nutmeg on top!

I don't count carbs for the erythritol, and I get 5 grams carb per serving.

Very nice! I tried for awhile to make egg custards in my microwave but they're so temperature sensitive I gave up and went back to the double boiler. But I think I'm going to try your method and maybe use the instant read thermometer to make sure I don't go over 160' or so.

I made this last night and I liked it. Mine was a little off from yous. I didn't use a thicken-meant to but forgot. Also, I didn't have coconut flour and was too lazy to pulverize some and used finely dessicated coconut instead. Also, used zylitol instead and toasted coconut curls for the top. I really enjoyed it. I always make do with what I have in the house. I'll make it again. Thanks, Anne

Nancy, I was a little dubious about the microwave part, too, but wanted to give it a try that way. I'll try it with my double boiler next time, maybe, see if I like it better. My thermometer is broken, alas, and I never seem to remember to pick one uf while I'm out. Maybe i should just go to King Arthur Flour catalogue online and order one before I forget!
