Hi all.
Yestersday I had to go to an Awards luncheon with my roommate (he was getting a reward for working for this company for 15 years)
I ate only my roast beef, mushrooms, salad, and steamed veggies.
I then ate a wedge of white chocolate/strawberry torte :eek:
The awards went on and on and on
After 2 hours I tested my blood: 138
We ordered dinner I had steak tips and it comes with potato skins with bacon/cheese. I was halfway through the skins when it hit me: What am I doing?! :eek: I stopped immediately.
After 2 hours I tested my blood: 140
Well this morning my morning fast was 188!
I ate my 2oz of cheese
tested at 1 hour: 166!
Wow
So what did I learn boys and girls? The damage happens a day after the effect! (I think)

Hi all. Well TOM left yesterday and so far today my carbs are only 6 grams. So why did my blood test say 155 for fast. 168 after breakfast and before/after lunch says 164? I had 2.5 oz of munster cheese and a slice of homemade meatloaf (the tomato in it gives me the 4 carbs, I count my cheese as 2 carbs)
I feel alittle ill in the intestines. Ideas? I am intollerant of cheese but its the only time I eat it.

I have no idea regarding your fasting bg except that I have heard of others requiring a couple days to get them back in line once a significant excursion occurs. Alternatively, perhaps your intestinal issues are symptomatic of an infection which can yield high or labile blood glucose numbers.
If you are cheese intolerant, shouldn't you forego the cheese, in the meal above (not to mention the potato :)) and in the mornings?

For whatever reason it seems like high glycemic oopsies can have an effect that lasts longer or spikes much later than you'd expect. I have no idea why.. delayed digestion like gastroparesis? It is a condition associated with diabetes.

Sigh, its just so hard to find something that doesn't require cooking, is low carb, and can be eaten at home/work.
Meat is so expensive now that we cut back at dinner time so no left overs. cheese lets me eat 2oz and not get hungry till way after lunch. I have nuts but only eat them occationally due to cravings if I eat too much (macadamia nuts) oh to clarify. I get cravings to chew on things. Gum makes me ill. Just another thing that is a stumbling block to me. So far only my nails are victims. :lol:

Early on... (doh, I have only been LCing for three months now but with amazing results)... I hard boiled and ate a lot of eggs... (I am not what you would call a cook) and the eggs were a good LC source of protein and fat for me.

Why no cooking?
Mornings are so busy for me that if I don't have to cook it I can grab it put it in my work bag and have it at work.

Oh just to let some of you know, I'm intollerant to eggs too. The whites of all things, especially.
Soy I'm allergic too. Basically I'm sensitive.

it always takes several days for my BG to normalize after eating carbs. and usually it's fruit carbs. who knows what it would take after a really carby day.
