I use the Tesco cream cheese (full fat version) which is very cheap. It comes in a dark blue container. You could also use the Philidelphia blocks of cream cheese but they are more expensive.

I often make flaxbread which I find a lot easier and tastier.

75g flaxmeal (ground up flaxseeds, any colour)
2 eggs,
1 tbs olive oil
2 tsp cocoa powder
1/2 tsp baking powder
A little sweetener.

Mix everything to a wet dough, pour into a small silicon bread pan (or well-greased metal one) and bake in a pre-heated oven for 16-18 minutes at gas 6. It's done when a toothpick comes out clean.

This has the texture of a moist flatbread or a muffin. My children bake it all the time and call it chocolate cake. It keeps well in a container in the fridge for several days. It is low carb, but not low cal, so cut it thinly, but it's great for spreading your cream cheese on.

You can make a savory version by leaving out the cocoa and sweetener and adding a little salt or spice instead.

Haha, I had the EXACT same problem! There I was in the Tesco cheese aisle not having the foggiest! I had to call my mum in the end who told me it was cheese spread so i got the tesco brand someone mentioned above.

They came out great btw!

Just look in the chill cabinat, near the cheese strings and stuff. There is a dark blue full fat cream cheese and a very pale blue low fat one (not recommended, it tastes gritty and nasty). If you have any Polish shops or food sections handy, check them as well. Poles really seem to like their cream cheese, and usually have a wide selection.

M&S does a cream cheese as well. And if you are very keen to bump up your fats as much as possible, check out mascapone cheese. High fat or what???

Don't forget that you can also use mayonaise (store bought or homemade) in place of the cream cheese in these rolls. In fact I think mayo may be the "original" version.

thanks so much for your help guys! I did find it and I have actually been eating the cream cheese with a spoon ever since.Right let me tell you about my oopsie experiment today.Instead of making a batter for 6 oopsies I made it for just about 2 oopsies because it was my first time and I didnt want to muck it up and waste everything.I dont have a hand mixer and damn the egg white mixing killed me!! when I placed everything in the oven it did rise but more it was more like a pancake and quite gooey inside. I gathered that my eggs whites were not stiff at all probably. BUTTT could some one tell me if 3 ounces of cream cheese is actually 18 teaspoons?I converted it through google and does that sound right because I want to follow cleochatra's exact recipe for 6 oopsies.Much appreciated!

3 ozs is a little under 100gms - the box of cream cheese is 200 gms, so just eyeball a half. I use the full 200 gms to make 12 oopsies at a time and it works great. I also add 35 gms whey protein to the yolk mix - makes it much more bready.
I also find them to be at their best on day 2 + - store in the fridge with a half open lid as they get a bit sticky if closed in.

Hahahaha! The tesco value range is fab for random kitchen bits...I had to top myself. They have hand blenders, whisks, scales, steamers etc etc. Don't think anything is above £10!

Where in the sticks are you?

Brought my argos mixer.Perfect.Did get a bit tired holding it though.really want the one nigella has on her programme but I dont actually need it! right so I did make the oopsie rolls but I spread it out on the tray rather than make it in blobs.it did look right and wasnt cheesy but are they supposed to be that airy and fluffy inside?i expected more of a bready texture and in some places it was gooey. My oven's broken so I have a small grill oven thing so I cant go according to your times and temperature but I dont think I am ever destined to make oopsies properly : ( any tips?

Maybe the bits in the middle didn't bake so well, especially if your oven is poor? Might be best to make individual heaps. Mine turn out almost exactly like bread. However, I have a Kenwood Major mixer on a stand which whomps those egg whites into big time submission. Also, try adding a 1/4 t of xanthan gum to the whites - it improves the texture.

thanks babs.god its hard work these oopsies! Don't know whether to buy xanthan gum or whey protein now! I'm definitely going to put them as blobs on the tray and then user a lower heat setting first because the tops of them just went crispy and brown straight away and everything inside must have been undercooked.thanks for your help guys and keep tuned to my latest batch because I might need your help again!

The batch I made were really quite eggy, especially in the middle...kinda like an over-cooked omelette.

I might try adding a bit of Whey or Xanthan Gum. Anyone know where you can by the latter in London? I've seen it on ebay but would prefer to buy it in a shop..!?

You can buy xantham gum in Tesco. Look on the Gluten-Free shelf for a jar called Bodyform.

mine were not like bread this time! they look like cleochatra's but on the inside they are gooey.is anyone willing to tell me how many teaspoons of cream cheese you use in accordance to the batch you are going to make.in teaspoons as I dont know any other measurements!

Elizellen
Wed, Apr-30-08, 10:16
Skinny, are you using a special measuring teaspoon or just any old teaspoon?

To be accurate you do need the special ones, as normal teaspoons vary so much.

Most supermarkets and cook shops sell them as a set including tablepoon, 1/2 tablespoon, teaspoon, 1/2 teaspoon, 1/4 teaspoon & 1/8 teaspoon for a couple of quid at the most.

And make sure you are using flat tablespoons/teaspoons, so they need to be scraped off level when dolling it out into the mixing bowl, not left heaped up.

SkinnyMinx
Wed, Apr-30-08, 10:22
elizellen i had no idea there were so many different teaspoons! i have just been playing it safe by only making a few oopsies so here is how much ingredients I have been using

I large egg
Few drops of vinegar
Pinch of salt/Sugar
6 teaspoons of cream cheese

is that totally wrong if your just doing a test trial?can someone pleaseeeeeeeeeeeeee give me measurements in teaspoons as if your going to only make a few because I'm in desperately need of these infamous oopsies that people are raving about!

Personally, I think weigh rather than measure. If something comes in a 200g tub, then a quarter of it is 50g etc. Most of my cooking disasters have been when I used spoons rather than weight.

Make flaxbread. Much easier. Or you could try my whey cupcakes.

1 egg separated,
1/2 whey (I like vanilla or chocolate flavour)
pinch baking powder
Sweetener if necessary.

Whisk the egg white till stiff and fluffy.
Mix the yolk, whey, baking powder and sweeterer with just enough water to make a smooth paste (add by teaspoon so it doesn't get too wet).
Fold into the egg white.
Divide into muffin moulds or cupcake cases (makes about 4 or 5)
Bake in a preheated oven for 6-8 minutes 200C.
Alteratively, microwave for one minute on high.

hey helen they sound perfect and soooo easy! you wrote 1/2 whey.what measurement is that in?tablespoons? and how many carbs do they have?sounds like the perfect snack!

Helen H
Fri, May-02-08, 13:51
Sorry, half scoop whey. Carbs depend on what type of whey powder you use. There is a bit of variation, but the amount is small. You can vary the amounts a bit, just don't get it too wet.
