A few weeks ago I tried making the "tortilla wrap" recipe that was posted somewhere on this site. I thought it was revolting, so I started thinking how I could make something similar to use as a sandwich wrap. Then the texture of the mock danish gave me an idea! :idea:

This was the result -- and I thought it was absolutely yummy!

1/4 cup ricotta cheese (3 carbs)
1 large egg (1 carb)

Beat the ricotta cheese and the egg together with a fork till smooth.

Butter the bottom of an 8 or 9 inch glass pie plate and pour half the mixture in the middle. It will spread out and form a circle about 6 inches in diameter.

Place in the microwave for about 1 minute -- times will vary based on the wattage of your oven. The edges will look dry, but the center might still be a bit "shiny." As long as the center isn't wiggly it's okay.

Next, carefully peel the "tortilla" from the pie plate. I used a wide spatula.

Then flip the tortilla into a non-stick fry pan and lightly brown it on both sides.

While you're browning the first one, you can cook the second one using the rest of the batter.

Browning it makes it a lot less fragile.

I took one tortilla, spread it with mayo, then put a couple of slices of turkey breast on it. I sliced about 3 mushrooms and spread them on the turkey. Then I sliced a quarter of a tomato and put that on the mushrooms. I sprinkled a quarter cup of shredded mozzarella cheese over the tomatoes and then sprinked a quarter teaspoon of oregano. (I LOVE mozzarell, tomato and oregano together!) Then I spread the second tortilla with more mayo and put it on top of the stack. Then I popped it into the microwave for about a minute to melt the cheese.

It's too messy to eat with your fingers, but it was delicious!

You could put any kind of meat or cheese and veggies in there.

With the turkey, tomatoes, mushrooms, and mozzarella, the whole thing was about 5 or 6 carbs. I ate mine with raw spinach sprinkled with some good olive oil. I was completely satisfied when I finished.

I tried those tortillas too with the recipe from the sight. I Must not be a big soy protein fan. They were allright. But I found something better too! We bought some Atkin's tortillas...there is a variety pack of green onion, garlic herb, and wheat. 12g of carbs in each...with 9 of that being dietary fiber. I spread vegetable flavored cream cheese on it, threw on a piece of ham, some leaves of lettuce, and a slice of cheese...yum! We have also fried them as that other recipe suggested, and they make great chips with some sour cream and low sugar salsa and are nice and crispy. My husband made chimichanga's with them the other night, and I had some soft shelled tacos. They aren't too bad for price either. $17.99 for a variety pack of 60 shells..plus shipping of course. I also have to try your recipe and see how it tastes. :)

I made quesadillas today for dinner and they were very tasty. I had a problem with the first "wrap" when cooking it in the microwave, but it turned out ok. I absolutely enjoyed it. Thanks for the great recipe. :daze:

About a month ago, I came across a different lowcarb wrap at ACADEMY (the sports & outdoors store). They were Salsa Verde Tortillas. AWESOME!!! Less carbs than the ones I had bought before and a different taste. Added that extra something to our fajitas. I can't find them at walmart though. Just Academy by hte checkout line. Hope you like them. I'm going to try making this recipe and adding different spices to it.
