Tonight for dinner I ate an omelet, consisting of...
3 eggs
1 piece of Cheese
1/2 Cup of Spinach
3/4 of a small Tomato
1 Large Mushroom
And drank about 3 cups of water.
I am so full and so satisfied, and I am just wondering if what I ate was ok. If I am allowed to have that much. Because if I can that will be a main dinner for me throughout the week.

Thats an excellent meal  as long as it was a low fat cheese....quantity is not an issue now so eat until you feel full.

Is it a necessity to have Low fat cheese? I just find it to be really gross.

Have you seen the food lists and meal plan charts yet? They are in the South Beach Babes thread, page 41. I highly suggest that you find them as they will tell you what is allowed. Print them up and use them as reference.
I can't tell you what to eat...but the parameters of the plan, especially for phase I, are to use low fat or fat free dairy/cheese.
