I was going to go grocery shopping but my kids are being terrors, so I'm waiting till my hubby gets home after lunch. I dug through the fridge and made a salad that I THINK is SBD phase 1 friendly, and it is DELICIOUS so I want to double check and make sure I did okay, and then I'll eat again for lunches to come!
1/8th cucumber, cut into cubes
1/4 cup finely chopped brocolli
1/4 cup chopped spinach
1/4 cup finely shredded red and green cabbage
1/4 green pepper, chopped
few sprigs of parsley
2 oz feta cheese
2 tsp greek salad dressing (basically oil, vinegar and spices).

You did fine :thup: ....was the 2 ozs cheese your protein?
Did you feel full when you were finished?
An idea is to throw an ind can of tuna into a salad like that. :idea:

The cheese was my protein yes. Phew, I finished it, and I'm thinking maybe I should've stopped a few bites before I was done. :yum: Darn it was good though!!!!!

Hi Babygrant,
Looks OK to me, but you don't have to be so shy w/ you veggies - in my thinking you could double all the veggies and still be SB friendly.
Watch out for feta (salty), as Judy can let you know, I had my run-ins w/ being a bit too free w. the feta. :)
