Today we have all kinds of extracted fats to choose from: butter, olive oil, lard, coconut oil, avocado oil, etc.
Before agriculture, was it common for people to isolate fats/oils from their foods and add them back to meals at a later time? How might they have stored these fats?

I doubt it. However, I still use some of them.

I've read about Native Americans storing animal grease in skin bags. Not sure where I read it though.
ETA: Even if they did store extra fat, they might not have necessarily been eating it. Fat has other uses, like weather-proofing garments and making candles/torches.

What about pemmican? Does that count?? Isn't that just animal fat mixed with meat, nuts and berries?
