Spinach Casserole

Very yummy...I make lots for RM dinner and then eat the leftovers at LC meals!

2 packages frozen spinach, thawed and drained
1 lb mushrooms
1 stick butter
1/2 c onion
1c sour cream
1/2 c parmesan cheese
(1 can artichoke hearts)-I leave out b/c too many carbs for CAD

Saute mushrooms and onion in butter. Mix all ingredients. Bake at 350 for 25 min.

Thanks, Doc! Looks great. I'm always looking for more spinach ideas. The artichoke hearts look like a good addition too.

This sounds yummy!! I'm pretty clueless in the kitchen. I've got this big 3 pound bag of fresh spinach. How do I equate that to the 2 packages of frozen spinach?

I made this last night for the first time. What a hit! Next time I think I will brown some sausage and add it in for an all-in-one meal. Thanks for the great recipe!!
