I just made a pork roast in the crock pot that is to die for! Like, plate-licking good. I want to eat the sauce with a spoon.
It's pretty much pulled pork, though I didn't want to insult real barbecue fans with my grizzly attempt. I was trying to remember what went into a friend's pulled pork.
Unfortunately, I didn't measure anything as it went in! It was midnight, I was tired... I just pulled stuff out of the fridge and tossed it in. So I'm going to make this again soon, measure the ingredients this time, and probably come back and edit the post.
Edited with measured ingredients:
1/2 onion, chopped
3-4 lb pork loin roast
6 Tbsp LC ketchup
1 Tbsp vinegar (I used apple cider)
1 tsp soy sauce
1 tsp mustard (yes, the yellow stuff. :blush: )
1 tsp paprika
1 tsp fresh ground pepper
3 drops Sweetzfree, or equivalent - 1 Tbsp or so of sugar sweetness
1 tsp lecithin granules (don't worry if you don't have this - it just helps emulsify the sauce)
Place the onion in the bottom of the crock pot, then the roast. Stir together the remaining ingredients except sweetener and lecithin, pour over meat. Cook on low for about 8 hrs or until done.
Remove the meat and either shred or slice it. Now here's the tasty part: pour the watery leftover liquid through a seive into a saucepan, and simmer until most of the water is gone. I actually overdid it and the consistancy was like tomato paste. Once cool, add sweetener and lecithin. Serve the meat with this sauce. :yum:
