I just tried George Stella's recipe for pizza crust last night, and MAN was it good! My kids were starting to get sick of the Deep Dish Pizza Quiche and my oldest son was asking for pizza with "real" crust, so I thought I'd give this recipe a try. You can find it on the Food Network website here:
Recipes: Low Carb Pizza (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_26722,00.html?rsrc=search)
Now, I am no fan of soy flour, so I had my doubts. I also didn't have any club soda on hand, so I substituted with a bit of extra cream to keep the liquid level the same. But this crust came out very, very good! I have a wonderful pizza stone that I had been dying to use, which I think helped give it a nice crispy bottom. I topped it with Ragu's No Sugar Added tomato & basil sauce, then pepperoni and plenty of mozzarella cheese. Even my boys liked it!
When I make this again, I will definitely plan ahead and add the club soda, plus maybe a little garlic powder and possibly some grated parmesan, just to flavor it up a little. But wow, this puppy actually tasted like real pizza!!
