I am new here and have gotten some fabulous recipes; so I thought I would share one of my own:

3 chicken breasts
1 box of frozen chopped broccoli
1/2 can cream of chicken and mushroom soup (approx. 10 carbs for half of the can)
1/4 cup parmesan cheese

Pound the chicken breasts flat (about 1/4 inch thickness) and set aside. Thaw broccoli and add the soup and parmesan cheese to the broccoli. Spread the broccoli mixture onto the chicken (as thick as you like) and roll up the chicken breasts, keeping as much of the stuffing in as possible. Place chicken in a baking dish, topping with a little garlic salt (I use a roasted garlc and sea salt mix I found at Costco) and some freshly ground pepper to your taste. Cover and bake ~ 375 for about 35-45 minutes, until chicken is cooked through. You can top with cheese, or I use hollandaise sauce, a bit of parmesan and some paprika (just looks so pretty!). It is delish and really good with a side of steamed aspargus. Enjoy!
