This is a low-carb adaption of a recipe I got from my sister-in-law a few years back.
3 pounds (10) boneless skinless chicken thighs
1 14-ounce can diced tomatoes with juice
1 can Eden organic black soybeans, undrained (you can find these in health food stores or in the organic section of your supermarket)
3 TB homemade taco seasoning mix (recipe from Linda Genaw's site)
Mix everything together in the crock pot and let it cook all day. Alternately, combine everything in a pot and simmer for about an hour. Use xanthan gum to thicken to taste, although it really won't work in the crock pot; it'll be more like soup. It still tastes good and per Fitday it's about 8 carbs a serving before fiber (3 thighs and a cup of tomato/bean mixture).
