This is a pretty simple shrimp paste and can actually be made and stuffed into any veggie.

You peel and de-vein raw shrimp. Then, you grind the shrimp in a food processor. To keep it from being dry, add either several tablespoons of semame oil or some pork fat (pork fat tastes best, if you have it) and continue grinding to make a paste. Season the paste with salt and pepper and minced chives and garlic (and a bit of fish sauce, if you like Asian cooking and have it on hand.).

Cut raw bell pepper into 2-3 inch square wedges. Fill the wedges with a falttened meatball size portion of the shrimp paste. On a cookie sheet or in a cake pan, bake the wedges at 350 until the shrimp is cooked and the pepper starts to soften. At the end, brown under a broiler for a few secs.

Season with soy sauce when you serve.

I've also made this shrimp and stuffed it into crab shells, japanese eggplant boats, mushrooms, etc.

Or take the lazy way out and roll the shrimp paste into balls and deep fry them plain.

Anyone who likes dim sum will recognize this and love being able to have it LC.
