:help: I've been looking everywhere for a "legal" bran muffin that doesn't use a bunch of exotic ingredients. Does anyone have one? I find the recipe sticky to be difficult to use, although Demi does a great job trying to keep it organized.
The DH used to go for cookies with his coffee in the morning and there are none in the cupboards. A bran muffin may help him get over his crabbiness first thing.

Would you like to try one of the flax muffin recipes? They are great for getting a muffiny type of feeling within the boundaries of our plan.
Heres how I do it:
1 egg
2 ozs egg whites
1 scoop whey protein(vanilla)
1/4 tsp baking powder
2 tbs flaxseed meal
Pam a large mug.....mix ingredients well, I use an immersion blender. Pour mixture into high sided mug and nuke it for 2 1/2 minutes.....its kinda spongy but it works for me with a bit of sugar free jam. :yum:
