This is my favourite soup that you get in chinese/indonesian restaurants in Holland.....so I thought I would try to re-create it! I am pleased with how well it turned out! Enjoy!!!

Indonesian Chicken Tomato Soup

This is based on one of my favourites soups in Holland at Chinese/Indonesian Restaurants
50 Minutes to Prepare and Cook
Ingredients
8 cups chicken broth
3 cups chopped tomatos
24 oz ground chicken breast
3 Tbsp grated ginger root
3 cloves chopped garlic
2 Tbsp chopped green onion
2 Tbsp chopped cilantro
3 Tbsp xylitol (or sweetener of choice, sugar, splenda)
1 Tbsp soy sauce
2 cups chopped bok choy
1 Tbsp of each, coconut oil, peanut oil, sesame oil
cayenne pepper to taste
salt to taste
Directions
Makes approx 10 one cup servings.
Pour chicken stock, chopped tomatos, 2 tbsp ginger root, 1 tbsp cilantro, 2 tbsp xylitol, soy sauce and oils into soup pan on high heat.
Make meatballs with ground chicken, mix with 1 tbsp ginger root, garlic, green onions, 1 tbsp cilantro, 1 tbsp xylitol, salt and pepper. Mix well and form into 1 inch balls. Drop into gently boiling soup.
Turn down to medium heat and let simmer for 30mins, (let simmer longer for more depth of flavour) add chopped bok choy , then serve.
May also serve with bean sprouts.
