can I eat roasted gammon? I know that you have to be careful with bacon because of the added sugar but wondered if I can roast a gammon joint from Sainsburys etc???

Yes, you can eat gammon. (It is cured pork steak, droppin) - some people go on about sugar and nitrates in cured food but I eat loads of bacon and ham anyway. If you are worried about such things, a minute or so in boiling water gets rid of a lot of the salt and other things in bacon.

As Robert said, gammon should be fine. Just make sure it isnt a 'maple cured' or 'honey cured' one!
