I watched this being prepared this AM on local TV and thought it sounded like a candidate for low carb wonderfulness. Credit for the original recipe is given to the restaurant chain Trader Vic's. I will try this tonight and let you know how this recipe works out:

MMMMMMM - as I started the recipe, I knew instantly that I would do it "my way" .... so here is what I did .......
1 jar fresh oysters - cut into bite size pieces
1 6 oz bottle clam juice
1 tsp crushed garlic
1 tsp Worchestershire sauce
tabasco sauce to taste - how hot do you want it??
With all of this in a shallow frying pan, bring it to a boil.
Shut off heat within a minute of boiling.
Add 2 cups or more fresh spinach
Put lid over contents and let spinach wilt.
Now - if one was to follow the original recipe you would put this into a blender with heavy cream - but I was happy to stop right at the wilt point.
I added some seasonings - again personal preference needs to direct that.
I spooned it into small soup bowls.
It is SO good and on this rainy Holy Saturday -it just feels like heaven!
Now there is enough left over for me to put that into the blender and see if I really want to go to Bongo Bongo!!!!!!
I hope someone will try this with me....but, again, if you aren't fond of oysters, this isn't the place to start.

Now that I have finally completed the Bongo Bongo soup by putting it into the blender and adding the heavy cream, I am happy to report it is WONDERFUL - either way.
I have done carb calculation - very roughly, BTW
5 oysters 12 carbs
2 c spinach 1 carb
clam juice 0 carb
cream (1 cup) 6 carb
seasonings 1 carb
20 carbs total - 4 servings
5 carbs per serving
OK --- that is it - over and out!

I agree that like Vegemite and grits, this is an acquired taste. :lol: :lol: I wasn't sure that I could deal w/ the blended mess, so it was a very pleasant surprise to learn that it is quite good ...but only if the bivalve doesn't tip one over!!!!!!!

While Ure Husband Is Out In The Yard Roasting The Oysters On The Grill
Throw Butter In Pan Add Onion And Garlic Add 1 Box Of Defrosted Frozen Spinach Stir It Around Till Heated ..Add Some Cream.. Cool A Bit
When Oysters Are Ready ..Open ..Cut Oyster But Leave it In The Shell ..Put A Good Spoonful Of The Spinach Mix On Top Of The Oyster ..And A Good Pinch Of Mozzeralla Cheese ..pack It On Top.. Due Several Of These ..close The Lid Back And Heat Till The Cheese Melts And Bubbles..yum Yum Yum
I Live On The Coast And We Have Ate Oysters This Way For Ever
If U Dont Have Fresh I Dont See Why U Cant Due The Same With Canned In A Glass Dish Just Layer Everything And Bake Till Melted If Fact I Think Ill Try The Canned Version Tonight And Let U Know :yum:
