4 boneless, skinless chicken breasts
4 slices Mozarella cheese
1 small onion, sliced
1 each red & green peppers, sliced
1 cup mushrooms, sliced
small amount of oil
salt & pepper to taste

Saute chicken breasts in oil 3-4 minutes on each side or until done. Add veggies and continue sauteeing until onions & peppers are soft. Cover each chicken breast with cheese and allow it to melt. Serve each piece of chicken with sauteed veggies on top.
